WHAT ARE GARLIC KNOTS?

Originated in New York, Garlic knots are a type of soft and airy garlic bread in the shape of a knot, developed to prevent wasting of leftover pizza dough scraps.

ABOUT THE PRESENT RECIPE OF VEGAN GARLIC KNOTS

Many made garlic knots with the pre-made pizza dough but we have made these Italian garlic knots from the scratch.

Though ready made dough helps in fastening the process of making garlic knots and you can opt this method whenever in a haste.

But nothing like making this dominos garlic knots vegan from the basics.

You can always control the portions and most importantly, that intense flavour of garlic.

Garlic bread is one such recipe in which more the garlic you add, it is still the less and such variations can only be controlled if you make it from the scratch.

CAN I TWEAK THE VEGAN GARLIC KNOTS RECIPE?

Of course yes.

There are few ways to twist the easy vegan garlic knots as per your liking.

Like, you can stuff some mozzarella (if not vegan or vegan moz) while rolling the dough.

Instead of cilantro, feel free to use parsley or rosemary.

While the knots are super hot, sprinkle some shredded Parmesan cheese over them. This cheese will take the taste of garlic knots a notch higher and you are going to have the best vegan garlic knots ever.

INGREDIENTS USED

BUTTER : This recipe uses vegan butter but feel free to use dairy butter if you aren’t vegan.

FLOUR : Making this an healthy recipe using whole wheat flour instead of all purpose flour, which otherwise is used traditionally.

MILK : Plant based milk is used in the recipe and again, if you have no boundaries, feel free to add dairy milk. We have used milk for activating yeast. But in case you don’t have vegan milk and can’t use dairy, replace milk with water.

YEAST : Active dry yeast is used in the recipe which needs prior activation by mixing it with luke warm water or milk and sugar.

But Instant dry yeast is also available which needs no activation. Read here more about yeast and it’s activation.

GARLIC : You have 2 open choices here. Fresh or the powdered one.
As everyone can’t have the garlic powder conveniently, fresh garlic pods are the best to use after mincing.

SEASONING : We are using mix herbs, oregano, red chilli flakes and salt in it.

HOW TO STORE GARLIC KNOTS?

These are not to be stored in refrigerator and stays good at room temperature for 2 to 3 days.

Refrigeration dries the bread and it becomes crusty and stale.

But if want to keep them for a longer period, then refrigerator is the only option.

You can keep garlic knots in refrigerator for upto a week and for 3 months, if freezed.

STEP WISE PICTORIAL METHOD OF DOMINOS VEGAN GARLIC KNOTS RECIPE

 

ACTIVATING YEAST

1.Take luke warm milk in a bowl and mix sugar in it.

2. Add yeast, mix and keep aside for 8-10 minutes for activating.

3. Yeast gets frothy and bubbly which means yeast is activated.

KNEADING DOUGH

4. Take flour in a wide bowl and add salt, mix herbs and garlic. Mix.

5. Add yeast mixture and mix it with the flour. The flour will be like breadcrumbs.

6. Then start adding water, little at a time and begin to assemble the flour.

7. When flour gets assembled, add 2 tbsp of oil and start kneading it.

8. Knead the dough for good 15 minutes.

9. Transfer dough in a greased bowl.

10. Apply oil on dough and cover the bowl with cling film.

11. Keep the bowl in some warm place of the kitchen for 1.5 hours so that it gets proofed and doubled in size.

MAKING OF GARLIC BUTTER

12. Take a microwave safe glass bowl and add all the ingredients mentioned for making garlic butter.

13. Microwave for 30 seconds and mix everything well. In case you don’t have microwave, just take melted butter and add all the ingredients in butter.

SHAPING OF GARLIC KNOTS

14. Unwrap the bowl and slightly knead the dough for a minute.

15. Divide the dough into small and equal sized 15 portions.

16. Roll each portion using your palms to form about 8″ long rope.

17. Lift both the ends of rope and carefully tie into a knot. (Watch video for better understanding).

18. Arrange all the knots on a baking tray lined with greased butter paper.

19. Cover them with some clean cloth or cling wrap and keep aside for 30 minutes.

20. After 30 minutes, knots will puff up and get double in size.

21. Brush garlic butter over the knots.

22. Bake in preheated oven @200°C/392°F for 20-25 minutes or until knots turn a light golden brown.

23. When the knots are baked, take them out of oven and brush plain butter over knots while they are very hot. This will bring a shine and glaze to the knots.

24. Take a damp cloth and cover the knots for 5 minutes. This step will make them extra soft.

Your garlic knots are ready. Enjoy with your favourite dip.

NOTES

  1. If yeast doesn’t active, don’t move ahead with the recipe. It will be a disaster.
  2. Instead of fresh garlic pods in dough making, you can use garlic powder too.
  3. Proofing time differs depending on weather. Where a dough gets proofed in 45 minutes in summers, same dough may take 1.50 to 2 hours during winters.
  4. In place of applying garlic butter on knots before baking, some make this recipe in a way that they wait for the knots to bake first. Only thereafter apply garlic butter. But we don’t like the raw taste of garlic, so applied garlic butter before baking.

Ingredients
  

1 Cup = 200 ml

    FOR ACTIVATING YEAST

    • 1/2 Cup Milk we have used oats milk
    • 2 tsp sugar we used cane sugar
    • 1 tsp yeast active

    FOR MAKING DOUGH

    • 3 Cups whole wheat flour 480 grams
    • 1 tsp mix herbs
    • 7-8 garlic pods minced
    • Salt to taste
    • 2 tbsp + 1 tsp oil
    • Water as needed
    • Yeast recently activated

    FOR GARLIC BUTTER

    • 1/2 Cup vegan butter
    • 7-8 garlic pods very finely chopped
    • 1 tsp red chilli flakes
    • 1 tsp oregano
    • 1/4 cup coriander leaves/cilantro finely chopped

    ADDITIONAL REQUIREMENTS

    • Vegan Butter as per need
