WHAT IS TUTTI FRUITY
Tutti fruity is a confectionery candied fruit which is sweet and colourful. You will find it in three primary colours i.e. red, yellow and green.
MAIN INGREDIENT TO MAKE TUTTI FRUITY
In india, tutti fruity used to be made with raw papaya and making it with watermelon rind is new trend for the last 2 – 3 years.
We haven’t made it with raw papaya ever but realized no difference in taste when eaten this one made with watermelon rind and compared to earlier eaten brought from the stores.
The watermelon rind is that white/light greenish part of the fruit which is left behind after we eat or scoop out the bright red juicy flesh.
This crisp part of watermelon is worth consuming which unfortunately meets the dustbin only.
IMPORTANCE OF COLOURS
As already mentioned above, tutti fruity comes in red, green & yellow colours. The effects of different colours to watermelon rind is given through artificial food colours. Do note that colour has nothing to do with taste and whatever be the color, taste of tutti fruity remains the same.
Here in this recipe, we left one portion of rind colourless i.e. natural colour which is almost close to yellow and is also looking so beautiful.
This is interesting to see that the one left colourless is giving yellow shade and the part in which yellow is added, showing the resemblance to orange colour. Isn’t it interesting?
Point here to pass is that if you are hesitant in using artificial colours, you can avoid using any colour and let all of your tutti fruit natural ie pale yellow.
Though it will not give that looking effect to your dish what a multi coloured tutti fruity gives, but this is what you have chosen yourself to avoid consumption of artificial colour. So stand by your decision.
USES OF TUTTI FRUITY
Tutti fruity is not an individual recipe in itself though you can eat as it is and kids generally love to do it.
Mainly used for toppings in ice creams, desserts or cakes, it brings a soft bite when eaten through the prime recipe and gives a beautiful look to the dish itself.

So with this recipe, let’s realise that watermelon has much more to offer us than just red juicy flesh. Here’s how..
Step wise pictorial method of Tutti fruity recipe
- Take the waste part of watermelon and with the help of peeler or knife, remove the outer skin which is dark green.
- From internal side too, remove the red spots, if any.
- Now you are left with light greenish scrap which is called rind and we are going to use it.
- Cut that rind into small dices as shown in picture. After cutting rind into dices, we had about four (4) cups of rind dices in hand.
- Take 5-6 (roughly) cups water in a pan and let it come to boil.
- Add rind dices and let them boil on low to medium heat.
- In 10 to 12 minutes, we will find the dices turning translucent/semi-transparent. See the picture no. 4 below.
- Switch off the heat and pass the rind dices through a sieve so that water drains from them.
- In the same pan, add sugar and 2 cups of water. Also add mix fruit essence. If mix fruit is not available, you can safely go with vanilla essence.
- When the sugar melts, add boiled rind dices and let them boil in sugar syrup on low to medium heat.
- Boil them for 10-12 minutes and thereafter switch off the heat. Dices must have soaked most of the sugar syrup, though there’s still remain some syrup at the base of pan.
- Take 4 small bowls and add rind dices in all bowls in equal proportion. While adding dices, do let some sugar syrup too shift in bowls.
- Add few drops of red food colour in one bowl, green in second, yellow in third and fourth bowl should be left as it is with no colour. Mix all the colours well.
- Let them put at rest for 10-12 hours or overnight. By now, rind dices have soaked a good amount of sugar syrup as well as food colour turning them into red, yellow and green dices. Those rind dices in which no colour was added are pale yellowish naturally and that too is a colour in itself.
- Drain the syrup from these bowls one by one by passing them through a sieve.
- Spread the rind dices on a tray or kitchen towel and let them turn completely dry. It will take about 1 to 2 days in completely evaporating their moisture.
Tutti fruity is ready. Put it in airtight container or ziplock bag and keep in refrigerator.
