Stuffed Mango Kulfi recipe (vegan) with step wise pictorial and video method.

Kulfi is an Indian dessert made with milk and sugar as main ingredients and  then eaten frozen.

About 2 years ago, the stuffed mango Kulfi was very much in trending in which the hollow mango was filled with kulfi base, then whole mango was frozen and finally eaten after slicing.

This recipe became talk of the internet (town 🙂 and almost everyone tried and loved it.

But everyone made it with a dairy milk making it edible for vegetarians only.

Recently we thought of giving a try to this stuffed mango Kulfi but wanted to make a vegan version.

Applied our mind to the fullest that how to make it easiest.

Finally decided to make a kulfi base with oats with the crossed fingers.

And to our utter surprise, this recipe came out so good and no one could even identify that the kulfi is made with oats.

STEP WISE PICTORIAL RECIPE OF STUFFED MANGO KULFI (VEGAN)

 

1. Soak oats in sufficient amount of water for 30 minutes.

2. Soak almonds and cashews separately for 30 minutes.

3. After 30 minutes, remove the skin of almonds. If you find it hard to remove the skin, then microwave or boil almonds for 1-2 minutes and then remove the skin.

4. Add almonds and cashews in a grinder jar after draining all the water.

 

5. Make a fine paste out of it.

6. Then drain oats and add them to the blender.

7. Blend to fine paste.

8. Then add sugar and vanilla essence.

9. Again blend to fine puree. This is oats kulfi base. Keep aside.

10. Take a mango but do not peel it. Remove the top of the mango by slicing the head. Retain this cap.

11. Now using a kitchen knife loosened the pulp around the mango seed.

12. Firmly hold the seed with a tong and rotate it to loosen it further.

13. Pull the seed out.

14. Place the mango inside a small cup so that it stands upright.

15. Remove any pulp from the seed and add it back to the empty mango shell.

16. Fill the mango cavity shell with the oats kulfi base.

17. Put the mango cap back and freeze it for 8-10 hours.

18. Remove and peel the mangoes.

Slice and serve after garnishing with pistachios and saffron and serve immediately.

NOTES

  1. Instead of oats, you can make any other vegan kulfi, you know about.
  2. Even if you freeze the oats kulfi base, you are going to get oats kulfi/ice cream.
  3. With 1/2 cup of oats, you will get kulfi base which can be filled in 4 mangoes. As we didn’t want to make 4 mangoes, we filled only 2 mangoes and freezed rest of the oats as it is.
