Roasted Carrot Soup recipe (Air Fryer & Oven)

INGREDIENTS USED IN MAKING ROASTED CARROT SOUP

CARROTS : Use the fresh juicy carrots to make this soup. Old carrots who has lost most of its moisture for so many days don’t give that vibrant and yummy results.

ONION : Onion gets caramelized after roasting, hence adds a rich and savoury flavour to soup.

GARLIC : Anything savoury is incomplete without the infused flavours of garlic.

VEGETABLE STOCK : This is basically the vegetable stock which make the soups more nutritious and more flavourful. If you don’t have vegetables stock, you can use water as well.

However both vegetable stock and water can be replaced with orange juice. Then it will be your carrot orange soup.

OIL : we have used olive oil but instead you can use any Vegetable oil with neutral flavours.

SEASONING: Seasoning is always personal choice. We have added salt, black pepper powder and mix herbs. You can go for any other thing you like.

 

 

Roasted Carrot Soup recipe (Air Fryer & Oven)

STEP WISE PICTORIAL RECIPE OF AIR FRYER ROASTED CARROT SOUP RECIPE (& OVEN)

1. Peel the carrots. The quantity of carrots and other ingredients is given in the recipe card below at the end of the post.

2. Roughly chop them and wash.

3. Add into a bowl.

4. Also add onion after roughly chopping and garlic cloves as well.

5. Drizzle olive oil and sprinkle 1/2 tsp of salt.

6. Give them a good mix.

ROASTING IN AIR FRYER

7. Spread the entire mixture in air fryer basket.

8. Air fry @190°C for about 15 – 20 minutes or until carrots are well roasted.

9. Take out and let them cool completely.

ROASTING IN OVEN

10. Spread the entire mixture in oven tray.

11. Bake in pre-heated oven @200°C for 40 to 45 minutes or until carrots are well roasted.

12. Take the tray out and let them cool completely.

FURTHER PROCESS

13. Add the roasted ingredients to the blender jar.

14. Add 1/2 cup vegetable stock. In place of vegetable stock, you can use water but stock gives more flavour to the soup.

15. Puree them very finely.

16. Transfer the pureed carrots into a pan.

17. Also add 2 cup of vegetable stock. Again, water can be used replacing vegetable stock but stock gives more flavour to the soup.

18. Add black pepper powder, salt and mix herbs.

19. Simmer for 10-15 minutes.

Roasted Carrot soup is ready. Serve hot after garnishing with black pepper powder, mix herbs and coriander leaf.

Ingredients
  

  • 500 gram Carrots (around 6-7)
  • 1 onion
  • 3 garlic cloves
  • 2.5 cup vegetable stock
  • 2 tbsp olive oil
  • Salt to taste
  • 1/2 tsp black pepper powder
  • 1/4 tsp mix herbs

Instructions
