Air Fryer Roasted Carrot Soup Recipe ( & Oven)

Ingredients
  

  • 500 gram Carrots (around 6-7)
  • 1 onion
  • 3 garlic cloves
  • 2.5 cup vegetable stock
  • 2 tbsp olive oil
  • Salt to taste
  • 1/2 tsp black pepper powder
  • 1/4 tsp mix herbs

Instructions
 

  • Peel the carrots. The quantity of carrots and other ingredients is given in the recipe card below at the end of the post.
  • Roughly chop them and wash.
  • Add into a bowl.
  • Also add onion after roughly chopping and garlic cloves as well.
  • Drizzle olive oil and sprinkle 1/2 tsp of salt.
  • Give them a good mix.

ROASTING IN AIR FRYER

  • Spread the entire mixture in air fryer basket.
  • Air fry @190°C for about 15 - 20 minutes or until carrots are well roasted.
  • Take out and let them cool completely.

ROASTING IN OVEN

  • Spread the entire mixture in oven tray.
  • Bake in pre-heated oven @200°C for 40 to 45 minutes or until carrots are well roasted.
  • Take the tray out and let them cool completely

FURTHER PROCESS

  • Add the roasted ingredients to the blender jar.
  • Add 1/2 cup vegetable stock. In place of vegetable stock, you can use water but stock gives more flavour to the soup.
  • Puree them very finely.
  • Transfer the pureed carrots into a pan.
  • Also add 2 cup of vegetable stock. Again, water can be used replacing vegetable stock but stock gives more flavour to the soup.
  • Add black pepper powder, salt and mix herbs.
  • Simmer for 10-15 minutes.
  • Roasted Carrot soup is ready. Serve hot after garnishing with black pepper powder, mix herbs and coriander leaf.
