STEP WISE PICTORIAL RECIPE OF SOYA CHUNKS PULAO WITHOUT PRESSURE COOKER

 

SOAKING OF SOYA CHUNKS

1. Take a bowl and add 1 cup soya chunks and 1/4 tsp salt.

2. Add boiling water so that Chunks get soaked thoroughly.

3. Leave aside for 20 minutes.

WASHING AND SOAKING RICE

4. Take 1 cup rice in a separate bowl.

5. Wash them 3-4 times and soak for 20 minutes.

PREPARATION OF SOYA CHUNKS PULAO

6. Take a pan and add 2 tbsp oil in it.

7. Add 1 tsp cumin seeds, 1 bay leaf, 2-3 green cardamoms, 1 black cardamom, 8-10 black pepper corns, small piece of mace/zavitri, pinch of nutmeg, pinch of asafoetida/hing, 1 star anise, 3 cloves, small piece of cinnamon, 2 green chilies and 2 dry red chilies.

8. Saute them till the cumin splutter.

9. Add 2 onions after cutting them lengthwise and 1 tbsp ginger garlic paste.

10. Saute till onion turns slightly brown but don’t let their crunch loose.

11. Add soya chunks after draining water but no need to squeeze the chunks.

12. Saute on high heat for 1 -2 minutes.

13. Then add rice after draining water and saute them too for 2 minutes.

14. Add 2 tbsp mint leaves, 2 tbsp coriander leaves,1 tsp garam masala, salt to taste, 1/8 tsp kewra water (optional) and 1+3/4 cup water.

15. Give them a good mix.

16. Put a lid and let rice cook on moderate heat.

17. After 10-12 minutes, rice will be completely cooked as the entire water will get evaporated.

18. Switch off the heat and let rice stand as it is with a lid for 5-7 minutes.

19. Swirl the rice using a fork.

Serve hot.

FOR SOAKING SOYA CHUNKS

  • 1 cup soya chunks
  • 1/4 tsp salt
  • Hot water as required

FOR WASHING & SOAKING RICE

  • 1 Cup rice (preferably basmati)
  • Water for washing and soaking rice

FOR MAKING PULAO

  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 2-3 green cardamoms
  • 1 black cardamom
  • 8-10 black pepper corns
  • Small piece of mace/zavitri
  • Pinch of nutmeg
  • Pinch of asafoetida/hing
  • 1 Star Anise
  • 3 cloves
  • Small piece of cinnamon
  • 2 green chilies
  • 2 dry red chilies
  • 2 tbsp mint leaves
  • 2 tbsp coriander leaves
  • 2 big onions
  • 1 tbsp ginger garlic paste
  • 1 tsp garam masala
  • 1/8 tsp kewra water optional
  • Salt to taste
  • Rice drained
  • Soya chunks drained
  • 1 +3/4 cup water

Instructions
