To understand this dish, you must know what is Poriyal & Thoran.

Poriyal is a Tamil word which is used for some fried or sauteed vegetables dish. Likewise, Thoran is the same thing but this word is used in Kerala cuisine.

The veggies are cooked along with generous amount of grated coconut and this is served as a side dish with rice or even chapati.

Poriyal is not confined to carrots and green beans but you can opt for cabbage, beetroot, spinach, jackfruit, ridge gourd, ivy gourd or mix of any two or more. And for the dressing, peanuts and sesame can be used alongwith coconut.

This recipe can be tweaked as per personal choices and many people love to add onions and garlic as well but they are not compulsory at all. A poriyal is all about veggies, coconut and minimal spices like salt and hing only.

South Indian Carrot Beans Poriyal | Easy Carrot Green Beans Stir Fry with Coconut | Carrot Beans Thoran

STEP WISE PICTORIAL RECIPE OF SOUTH INDIAN CARROT BEANS PORIYAL

 

Add fresh coconut, curry leaves and dry red chilies in a grinder jar.

Grind without adding water.

Heat oil in a pan. Add mustard seeds and urad dal. Let them turn brown.

Add chopped carrots and green beans. They should be cut in the similar size so that both get cooked at the same time. Add salt and hing. Mix.

Add water, mix and put a lid. Cook for 8-10 minutes or until both carrots and green beans turn soft enough to eat, but don’t let their crunch go completely. If there’s any water left, let it evaporate.

Add grinded coconut.

Mix well and saute for a minute or two.

Serve hot.

1 cup = 250 ml

  • 1 cup green beans (chopped)
  • 1 cup carrots (chopped)
  • 1 cup fresh coconut
  • Handful of curry leaves
  • 4 dry red chilies
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1/4 tsp hing
  • Salt to taste
  • 1 tbsp oil
  • 1/4 cup water or as required
