South Indian Carrot Beans Poriyal | Easy Carrot Green Beans Stir Fry with Coconut

South Indian Carrot Beans Poriyal is a simple, flavorful stir fry, often served as a healthy side dish with rice.

Ingredients
  

1 cup = 250 ml

  • 1 cup green beans (chopped)
  • 1 cup carrots (chopped)
  • 1 cup fresh coconut
  • Handful of curry leaves
  • 4 dry red chilies
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1/4 tsp hing
  • Salt to taste
  • 1 tbsp oil
  • 1/4 cup water or as required

Instructions
 

  • Add fresh coconut, curry leaves and dry red chilies in a grinder jar.
  • Grind without adding water.
  • Heat oil in a pan.
  • Add mustard seeds and urad dal.
  • Let them turn brown.
  • Add chopped carrots and green beans. They should be cut in the similar size so that both get cooked at the same time.
  • Add salt and hing. Mix.
  • Add water, mix and put a lid.
  • Cook for 8-10 minutes or until both carrots and green beans turn soft enough to eat, but don't let their crunch go completely. If there's any water left, let it evaporate.
  • Add grinded coconut.
  • Mix well and saute for a minute or two.
  • Serve hot.
