South Indian Carrot Beans Poriyal is a simple, flavorful stir fry, often served as a healthy side dish with rice.

1 cup = 250 ml
- 1 cup green beans (chopped)
- 1 cup carrots (chopped)
- 1 cup fresh coconut
- Handful of curry leaves
- 4 dry red chilies
- 1 tsp mustard seeds
- 1 tsp urad dal
- 1/4 tsp hing
- Salt to taste
- 1 tbsp oil
- 1/4 cup water or as required
Add fresh coconut, curry leaves and dry red chilies in a grinder jar.
Grind without adding water.
Heat oil in a pan.
Add mustard seeds and urad dal.
Let them turn brown.
Add chopped carrots and green beans. They should be cut in the similar size so that both get cooked at the same time.
Add salt and hing. Mix.
Add water, mix and put a lid.
Cook for 8-10 minutes or until both carrots and green beans turn soft enough to eat, but don't let their crunch go completely. If there's any water left, let it evaporate.
Add grinded coconut.
Mix well and saute for a minute or two.
Serve hot.
