Rajgira Namkeen for fasting in Air Fryer with step wise pictorial and video method.
Vrat friendly, Vegan and Gluten -free.
Rajgira, called as Amaranth seeds is commonly used during fasting for making Kheer, and also it is used during the festival of lohri for making ladoo and chikki.
Though cookies are not common but last time when some Rajgira was left with us after the fasting was over, we made the Eggless Rajgira Cookies, which came out so delicious and you can try these one also.
But remember, cookies are not recommended as fasting recipe because it has baking powder and baking soda as well. We are just suggesting a different recipe using Rajgira, simple.
Coming back to present recipe of Vrat Friendly Rajgira Snack Mix, the uniqueness of this recipe lies in the fact that it is the only recipe (atleast as per our knowledge) with Rajgira which is savoury in taste.
Otherwise be it kheer, ladoo or cookies, all are sweet.
Vrats, be it of Navratri, Ekadashi, Shivratri, Janmashtami or others, there’s often a limited ingredient choices. So whatever you are having in your hands, try to recreate it in different ways.
This recipe of easy Rajgira Namkeen for fasting offers a great savory option where most of the fasting snacks tend to be sweet.
The beauty of this Rajgira Chivda lies in the fact that you can tweak it as per your liking for ingredients, their availability and over the top, their quantity can also be adjusted by choice.

Step wise pictorial recipe of Rajgira Namkeen for fasting in Air Fryer
Add almonds, cashews, coconut, peanuts, curry leaves, green chilies, sugar, salt and oil in an Air Fryer basket. You can do the similar process in pan if don’t have Air Fryer.
Mix well.
Put a mesh rack on these ingredients to prevent the light ingredients to fly around or get stuck in the fan during Air Frying.
Air Fry @200°C for 2 minutes.
Bring the basket out, remove the mesh and stir the ingredients by shaking the basket.
Again put the mesh and air fry @200°C for 3 minutes.
Then add raisins and air fry @200°C for 2 minutes by placing the mesh over the ingredients.
Bring the basket out and give it a stir.
Lastly add puffed rajgira seeds and mix well.
Again put the mesh and air fry @200°C of 2 minutes.
Bring the basket out mix well.
Take the mixture out and let it cool down completely.
Rajgira Namkeen is ready. Store in an air tight container.

NOTES
- If don’t have Air Fryer, you can do the similar process in a heavy bottomed pan as well following the similar sequence of ingredients.
- Quantity of ingredients like almonds, cashews, coconut, raisins and peanuts can be varied as per your convenience.
- You can skip any such ingredient or add something additional like pumpkin seeds, sunflower seeds, watermelon seeds, flax seeds, lotus seeds, sabudana pearl, walnuts and anything of your choice which can be consumed during fasting.

Rajgira Namkeen for fasting in Air Fryer
Ingredients
1 cup = 250 ml
- 4 cups puffed rajgira/Amaranth seeds
- 1/4 cup almonds (halved)
- 1/4 cup cashews (halwed)
- 1/2 cup raisins
- 1/2 cup dry coconut (cut into slivers)
- 1/4 cup peanuts
- 15-20 curry leaves
- 2 green chilies
- 1 tsp sugar
- 1 tsp/or according to taste rock salt (sendha namak)
- 1 tbsp oil
Instructions
- Add almonds, cashews, coconut, peanuts, curry leaves, green chilies, sugar, salt and oil in an Air Fryer basket. You can do the similar process in pan if don't have Air Fryer.
- Mix well.
