Baingan Bharta,” unofficially called as Mashed Eggplant is a popular Indian sabzi made in almost every household. Even we have posted earlier titled “Smoked Eggplant Curry

This time we have made typical punjabi baingan bharta in a slightly different manner and OMG, what a taste. This time :

…it is associated with green peas/matar
…no separate cooking of spices, onion and tomatoes. All goes together in a go, making the recipe much time saving and convenient. And 
…no coal smoking/dhuni.

But after trying this north indian eggplant and peas curry recipe, we have decided to make baingan ka bharta this way only for all the times to come.

Make sure there’s no hole, even the tiny one, anywhere on the eggplants. Because an eggplant with the hole is sure to have insect within.  Wash them very well. Stab the eggplants with knife here and there, randomly making small insertions all around. Apply mustard oil on the entire surface of eggplants.

ROASTING OF EGGPLANT

Place eggplants in microwave safe dish and microwave on high for 10 minutes. (timings may very depending upon eggplant size). If you don’t have microwave, you can directly roast the eggplants on gas stove over a grill. In case of such roasting, you need not to stab the eggplants. After 10 minutes, turn the sides and  microwave further for 10 minutes. You can check by inserting a knife, whether eggplants are thoroughly roasted or not. Once done, remove them from Microwave and leave to cool down to such an extent that they are touchable. Peel the skin off. Cut the stem part. Keep aside.

COOKING MATAR BAINGAN BHARTA 

Heat oil in a pan. Add onion, tomato, green chilies, cumin seeds, kashmiri red chilli powder, turmeric powder, coriander powder, salt and masala-e-magic, all together in one go. Mix everything well. Put a lid and let it cook on low heat while stirring occasionally.

When tomatoes turn completely mushy and oil is seen separating, add roasted eggplants. Mash them well and roast it for a minute. Then add boiled green peas. Mix well. Lastly add garam masala and coriander leaves. Mix well.

Matar baingan bhartha is ready. Enjoy.

NOTES

  1. There’s a particular shaped eggplants which are suitable to make bharta and they are round big one. So don’t go for any other eggplants.
  2. If making bharta with more than one eggplant, then make sure they all are of almost uniform size so that there will be no time distribution issues while roasting them.
  3. Do not over roast. On excessive microwaving, eggplants tend to turn somewhat dry loosing the natural moisture.
  4. Prefer to use mustard oil for this recipe for authentic taste.

Ingredients
  

FOR ROASTING EGGPLANT

  • 500 gram brinjal/eggplant (round shaped)
  • 2 tsp mustard oil

FOR COOKING

  • 1/2 cup green peas (boiled)
  • 3 tomatoes (roughly chopped)
  • 2 onion (roughly chopped)
  • 3-4 or as per taste green chilies
  • 2 tbsp mustard oil
  • 1 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1 tsp Kashmiri Red chilli powder
  • 1 tsp coriander powder
  • Salt to taste
  • 1/2 tsp garam masala
  • 1 tbsp Maggie Masala-e-Magic (optional but recommended)
  • 2 tbsp fresh coriander leaves
