WHAT IS IDLI?

 

Idli is the world famous staple food from South India. Made from the fermented batter, traditionally made by grinding overnight soaked rice and lentils, then steaming it into fluffy, pillow-like cakes.  Idlis made using instant method is vegan by dafault.

With the times, many instant versions have taken the place of traditional methods & now the quick variation of idlis are floating so myriad.

Be it semolina, rice flour, oats, millets, different lentils and so on, idlis are being prepared with the many more ingredients as well and that too using instant methods.

INSTANT IDLI WITHOUT CURD

 

Idli without curd is highlighted for a purpose. As already stated, traditional idli is vegan by default but Curd/yoghurt is an important and Integral part of idli making process when it comes to vegan instant version. In the traditional version, there is no use of curd but when it comes to instant version, curd is almost important. 

Curd or yogurt makes the batter to enhance the fermentation process and add a slight tanginess to the idlis. It is also helpful in making the idlis softer and more flavorful.

But what if one is vegan or lactose intolerant?

Or what if you fall in need to make idli instantly and don’t have curd at home?

To meet these few criterias, here we have the recipe of idli without curd or can say vegan idli recipe.

IDLI WITH CURD V/S WITHOUT CURD

 

Believe this, Instant idli made with curd and without curd carry no difference at all. Completely not at all.

Even if you serve a person with both types of idlis and do inform him about their difference, he will not be able to find the difference between the both.

The taste, texture and appearance of idli without curd is completely like curd idli.

THE SECRET INGREDIENT & SUB FOR CURD

 

Here it is, the Citric Acid, also called by the names Nimbu Sat and Tatri in Hindi.

Citric acid is an organic acid found in citrus fruits like lemons, limes, oranges, and grapefruits. Citric acid can enhance fermentation efficiency and contribute to the production of desired products such as dhokla, alcohol, vinegar and certain other products. Not just fermentation but it is often used to add sourness to foods and beverages.

Citric acid typically comes in the form of a white, crystalline powder. It’s odorless and has a tart taste.

In India, it is easily available in provisional stores. If you don’t get it by the name citric acid, it is also available in the form of crystals with the names Nimbu Sat or Tatri. You can also find it in Pansari’s shop.

 

HOW TO SERVE IDLI?

 

Traditionally Idli is served with sambar and coconut chutney. But at times, it is not possible to make sambar and coconut chutney, hence you can enjoy it with tomato ketchup and a cup of hot tea.

STEP WISE PICTORIAL RECIPE OF INSTANT IDLI WITHOUT CURD RECIPE

 

Take a bowl and add citric acid and salt. Also add water and give a good mix. The quantity of ingredients is given in the recipe card below.

Then add rice flour and semolina.

Mix well leaving no lumps behind and leave for rest for about 15 minutes.

When 15 minutes are over, mix again and divide the batter into two parts.

Note : Actually it’s a stage to add baking soda in batter but once baking soda is added, batter needs to be steamed immediately. Our idli mould can make only 8 idlis at a time whereas the batter is of 16 idlis, so this is the reason to divide the batter. You can act accordingly as per your idli mould.

Add 1/8 tsp of baking soda in one part and mix well.

Pour the batter in idli moulds.

Put into the steamer and steam for 15 minutes.

Check by inserting the toothpick. If it comes out clean, its a sign that idli is perfectly cooked. Thereafter let it cool a bit for 3-4 minutes.

Take the idlis out using the wet back side of the spoon.

Likewise prepare the leftover batter as well.

NOTES

  1. You can double or triple the quantity as per your requirement.
  2. We have made the idlis by mixing both rice flour and semolina. You can make the idlis using only 1 ingredient from amongst the two. But in that case, keep an eye on the quantity of water you are pouring.

Ingredients
  

  • 1/2 cup semolina/rava/cream of wheat
  • 1/2 cup rice flour
  • 1/2 tsp citric acid/numbu sat
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 cup water
  • Oil for greasing idli moulds

Instructions
 

  • Take a bowl and add citric acid and salt.
  • Add water and give them a good mix.
  • Then add rice flour and semolina.
  • Mix well leaving no lumps behind.
  • Leave for rest for about 15 minutes.
  • In the meantime, grease the idli moulds with oil.
  • Also put the water in a steamer to boil.
  • When 15 minutes are over, give one more mix to the batter.
  • Divide the batter into two parts.
