STEP-WISE PICTORIAL RECIPE OF HOMEMADE CHYAWANPRASH RECIPE ;

 

MAKING OF AAMLA PASTE

To make amla paste, first we need to cook the Amla and for that wash them and put them into the steamer basket. Instead of steaming,you can pressure cook for two whistles or boil the amlas.

Steam for 20 or 25 minutes or until soft & tender. You can check by inserting a toothpick or knife. Leave aside to cool completely.

Remove the seeds. As the aamlas will open themselves, you need not to use knife even to remove seeds.

Put the amlas in blender jar alongwith almonds, raisins and basil leaves.

Grind them. If it not turning into a paste, you can use water.

Keep aside the aamla paste.

MAKING OF SPICES POWDER

Add green cardamoms, bay leaves, cinnamon stick, Peepli/long peppers, cumin seeds, fennel seeds/sounf, cloves/loung, mace/javitri, piece of dry ginger, piece of nutmeg and sesame seeds.

Roast on medium heat for 2-3 minutes.

When cool completely, grind them to a fine powder. Keep aside.

MAKING OF JAGGERY WATER

Add jaggery and water in a saucepan.

Boil till jaggery melts.

Sieve and keep aside.

ASSEMBLING OF INGREDIENTS AND MAKING OF CHYAWANPRASH

Take a heavy bottomed pan and melt desi ghee in it. Add aamla paste. Mix well so that paste absorbs all the ghee.

Add powdered spices, shatavari, Ashwagandha and mix well. You can skip last two ingredients if you don’t get them easily.

Then add jaggery water.

Now start cooking everything together
on low heat while stirring occasionally.

Put a lid as the paste in the pan will splash here and there.

Cook till mixture turns slightly thick, bubbling and leaving the sides of the pan. It may take upto 25-30 minutes.

Remove the pan from the heat.

Once cool completely, add honey and saffron strands.

Mix so well.

NOTES :

  1. Instead of jaggery, you can use desi khand or jaggery powder. In that case, no need to make jaggery water.
  2. Even the dates paste can be used as sweetener.
  3. Here we have 350 gram jaggery and 50 gram honey. You can swap both in any proportion you like. Even complete honey can be added.
  4. Make sure the mixture is completely cool before adding honey because as per ayurveda, honey should never be heated to retain its nutrients.

HOW TO CONSUME CHYAWANPRASH?

  • Chyawanprash is typically consumed once a day, preferably with warm milk or water.
  • Adults can have 1 teaspoon, two times a day with lukewarm milk or water in the morning and evening.
  • For kids starting from 3 years age onwards, 1/2 teaspoon of chyawanprash daily is enough.

Ingredients
  

FOR MAKING AAMLA PASTE

  • 500 gram aamla/gooseberries
  • 20 almonds
  • 2 tbsp golden raisins
  • 10 fresh or dry basil leaves/Tulsi
  • 3/4 cup water

FOR MAKING POWDERED SPICES

  • 6 Green cardamoms
  • 3 bay leaves
  • 1 inch cinnamon stick
  • 4-5 Peepli/long peppers (replace with black pepper corns if you don't get Peepli)
  • 2 tsp cumin seeds
  • 1 tbsp fennel seeds/sounf
  • 6 cloves/loung
  • 3 flowers of mace/javitri
  • Small piece of dry ginger
  • Very small piece of nutmeg
  • 2 tbsp sesame seeds (white or black or mix)

FOR JAGGERY SYRUP

  • 350 gram jaggery
  • 1/2 cup water

FOR ASSEMBLING ALL & MAKING CHYAWANPRASH

  • 4 tbsp/60 gram desi ghee
  • Spice powder
  • Jaggery syrup
  • Pinch of saffron
  • 50 gram honey
  • 1 tsp Ashwagandha (skip if you don't get it easily)
  • 1 tsp Shatavari (skip it you don't get it easily)
