WHAT IS FOCACCIA BREAD?

 

“Focaccia” is a Latin word which means hearth or fireside and if you read it in reference to a Bread, it means “a bread baked on the hearth or hot stone.”

It’s not that we got to know about Focaccia very recently only. But we have been seeing and knowing about this bread since long but never dared to try it under the impression that it must be very complicated to make. 

Recently we dared ourselves to go for it and after making this piece of art, we laughed at ourselves thinking that it so idiotic to consider it a difficult recipe. Rather this is one of the most easy bread recipes we have ever tried. The most exciting part of the recipe is that it requires no kneading at all.

Now we are of the opinion that if you are a beginner, then Focaccia is the best recipe to begin with.

MOST VERSATILE & FORGIVING BREAD 

 

Yes, the only thing which calls for precision and patience is the art over it but that’s optional, especially when you are baking for yourself. Just sprinkle of red chilli flakes, oregano, mix herbs or rosemary is enough. Besides anything you want to do, your choice. What we have mentioned are the just basic one.

Focaccia is not just easy & fun to make bread, but it is the most forgiving recipe as well.

Anything you add to flavour it, even if there’s minor error in exact quantity of water, decorate with anything you like, all these things are within your domain.

If you accidentally add more water, just bake for more time and this will be your high hydrated bread. Simple.

FERMENTATION PERIOD OF FOCACCIA BREAD

 

Fermentation period may vary depending upon weather to weather conditions. 

If baking in winters, you can keep the dough overnight or for 12 to 24 hours on a kitchen shelf.

Even in summers, you can keep the dough overnight but in that case only in refrigerator and no way on the shelf. But at the time of baking, dough has to be brought to room temperature before leaving for second fermentation.

You have one more liberty in summers. Instead of leaving the dough in refrigerator overnight, let it ferment on kitchen shelf for 2 to 2.5 hours, like we generally do for other breads.

Likewise the second fermentation time also varies.

So pull up your socks and go for this bread that made you fall in love with baking.

 

 

High Hydration No-Knead Focaccia Bread Recipe

STEP WISE PICTORIAL RECIPE OF HIGH HYDRATION NO-KNEAD FOCACCIA BREAD RECIPE

 

Take flour, salt, sugar, mix herbs and yeast in a bowl. Mix.

Add warm water and olive oil.

Mix it well giving 8 to 10 folds but don’t overdo.

Cover the bowl with cling film or tight lid. We shifted the dough in another greased bowl having an airtight lid. Leave the dough on shelf (If winters) or in refrigerator (if summers) overnight. It’s winters here with 8 to 10°C temperature on the relevant night, so we left the dough on the kitchen shelf.

Next morning the dough will double in size. In case you had left in refrigerator, let the dough come to room temperature.

Transfer the dough in generously greased baking dish and spread all over. If you dough is less hydrated, you have to oil your fingers and then spread the dough to all the sides of dish. As our dough was highly hydrated, spatula was enough to spread the dough.

Cover the dish and again leave it for 2nd proofing for 2 hours. However timing may vary from weather to weather.

Dough is puffed up again.

Poke some dents on all over the dough with oiled fingers. As our dough is highly hydrated, the dents may not be legible. Drop some olive oil over the dough.

Now it’s time to decorate. We have used dill leaves, cherry tomatoes and pineapple. However it is not about recipe but only about creativity how you decorate it.

Bake in preheated oven @200°C for 35-40 minutes or until bread turns brown and crisp.

Take the bread out of oven, let it cool down completely.

Cut into slices and enjoy.

NOTES

  1. We have used instant yeast which requires no prior activation and that is why it is added directly into the flour. But in case you are using active yeast, first activate it by dissolving it into warm water and sugar and wait for 10 minutes.
  2. You can make the bread more flavourful by adding red chilli flakes, black pepper powder and oregano into it while mixing.
  3. It’s not that you cannot use any other oil other than olive, but it is only the only the olive oil which gives you the exact authentic taste of foccsia bread.
  4. We have made the bread with high hydration’ that is why added 2 cups of water for 3 cups of flour. But you can reduce the quantity of water by 3-4 tablespoons with no issues. High hydrated bread turns more soft and fluffy.
  5. To decorate the bread, you can use Cherry tomatoes, bell peppers (3 colours), red onions, olives, rosemary, thyme, basil, spinach leaves, coriander leaves, carrot ribbons, beetroot slices, capers, spring onions, chilli slices, sesame seeds, nigella seeds, garlic slices, mushroom slices, parsley and zucchini slices. The options are endless.

Ingredients
  

1 cup = 250 ml

FOR MAKING BREAD

  • 3 cup /370 grams all purpose flour
  • 1.5 tsp dry yeast (we have used instant yeast)
  • 1 tsp sugar
  • 1.25 tsp salt
  • 1 tbsp mix herbs
  • 4 tbsp Olive oil
  • 2 cup warm water

FOR DECORATION (Anything you like). We have used -

  • Dill leaves
  • Cherry tomatoes
  • Pineapple
