Hare Pyaz ki Sabzi Recipe | Spring Onion  Sabzi with step wise pictorial and video method.

Hara pyaz, which is called spring onion is the winter vegetable, generally considered for garnish in Indo – Chinese dishes.

This limited consideration makes it the most underrated vegetable, which other has the great tendency to turn into a full fledged vegetable.

Be it dry sabzi, with potatoes, plain or semi-dry, this green vegetable is so versatile that you can convert it into any form, as stated.

Minimal ingredients, basic spices and quick preparation, this nutritious vegetable is not just easy to cook and delicious to eat, but also light on the stomach, highlighting it’s healthy aspect.

Earlier also we have made spring onion parathas and they came out so delicious. And this time sabzi made out of them completely surprised us.

So as long as season is there, bring home this comfort vegetable and enjoy it as everyday Indian meals, which pairs best with roti and paratha

STEP WISE PICTORIAL RECIPE OF HARE PYAZ KI SABZI RECIPE

 

Cut and wash spring onion. Keep the lower part (spring onion bulbs) and upper part (spring onion greens) separate.

Heat mustard oil in a pan to the smoking point. Add potato dices and roast until they turn brown and almost 80% cooked.Take the potatoes out of oil.

 Add cumin seeds, ginger, garlic and green chilies in the same oil. Cook for couple of seconds. Add spring onion bulbs, kashmiri red chilli powder, turmeric powder and coriander powder. Cook for 4-5 minutes so that bulbs turns slightly soft. Add roasted potatoes and mix well.

Add spring onion greens and mix. Put a lid and cook on high heat for 5 minutes.Remove the lid and add salt and garam masala. Mix well. 

Hare pyaz ki sabzi is ready. Serve hot with roti.

NOTES

Salt is added in the end because spring onion shrinks a bit on cooking. So initially added salt may turn out to be high, in case assessment goes wrong.

  • 500 gram spring onion
  • 3-4 potatoes

  • 3-4 garlic cloves (chopped)
  • 3 green chilies (chopped)
  • 1 tbsp Kashmiri Red chilli powder
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 3 tbsp Mustard oil
