Hare Pyaz ki Sabzi Recipe is a simple, comforting Indian stir-fry made with fresh spring onions, mild spices, and everyday pantry ingredients.

Ingredients
  

  • 500 gram spring onion
  • 3-4 potatoes
  • 1/2 tsp cumin seeds
  • 1 tsp ginger (grated)
  • 3-4 garlic cloves (chopped)
  • 3 green chilies (chopped)
  • 1 tbsp Kashmiri Red chilli powder
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 3 tbsp Mustard oil

Instructions
 

  • Cut and wash spring onion. Keep the lower part (spring onion bulbs) and upper part (spring onion greens) separate.
  • Heat mustard oil in a pan to the smoking point.
  • Add potato dices and roast until they turn brown and almost 80% cooked.
  • Take the potatoes out of oil.
  • Add cumin seeds, ginger, garlic and green chilies in the same oil.
  • Cook for couple of seconds.
  • Add spring onion bulbs, kashmiri red chilli powder, turmeric powder and coriander powder.
  • Cook for 4-5 minutes so that bulbs turns slightly soft.
  • Add roasted potatoes and mix well.
  • Add spring onion greens and mix.
  • Put a lid and cook on high heat for 5 minutes.
  • Remove the lid and add salt and garam masala. Mix well.
  • Hare pyaz ki sabzi is ready. Serve hot with roti.

Notes

Salt is added in the end because spring onion shrinks a bit on cooking. So initially added salt may turn out to be high, in case assessment goes wrong.
