Eggless Strawberry Upside down cake recipe with step wise pictorial and video method.
Bright shining strawberry over the top of a strawberry flavoured cake is something that has all the abilities to grab your attention.
Upside down cakes are always appealing, be it pineapple or banana upside down cake.
Presently strawberries are in the season and this is the right time to make a delicious cake with the fresh strawberries flaunting in the market.
We have kept the top of this cake simple by just arranging strawberries with no brown sugar at the base and inspite of that, the cake had a beautiful top.
TIPS TO MAKE PERFECT STRAWBERRY UPSIDE DOWN CAKE
1. Do grease the baking tin and place the butter paper at the base of cake tin. Placing a butter paper will help you to remove the cake easily without getting the strawberries stuck at the bottom.
2. Sift the dry ingredients for sure. This makes the cake light and fluffy.
3. Although granulated sugar also works fine but powdered sugar proves to be the best. It needs no time in dissolving.
4. All the ingredients should be at room temperature be it strawberry, curd or milk, if using.
5. Do not over mix the batter. It will cause the gluten to form and cake becomes dense.
6. If you feel that the cake batter is very thick, you can add one or two tablespoons of milk, even though it is not mentioned in the recipe.
7. Before putting the cake inside oven, do pre-heat the oven for 10 minutes.
STEP WISE PICTORIAL RECIPE OF EGGLESS STRAWBERRY UPSIDE DOWN CAKE RECIPE
1. Grease a cake tin and place a butter paper in it. Also grease the butter paper.
2. Take 6-7 washed strawberries and slice them lengthwise.
3. Arrange all the chopped slices on the butter paper placed in baking tin. Keep aside.
4. Take a bowl and add 1/4 cup curd in it.
5. Then add 1/4 tsp baking soda and mix well.
6. Rest for 5 minutes.
7. Then add 1/4 cup oil, 3/4 cup powdered sugar, 1/2 cup strawberry puree and 1 tsp vanilla essence.
8. Mix them very well.
9. Put a sieve on the bowl.
10. Add 1 cup wheat flour, 1 tsp baking powder and pinch of salt in the sieve.
11. Sift them into the bowl.
12. Mix using cut and fold method.
13. Pour the batter in the baking tin over the strawberries.
14. Tap the tin so that batter gets spreaded .
16. Bake @180°C in a pre-heated oven for 35-40 minutes in the middle rack of oven with both the rods on.
17. Take the cake out and check by inserting a toothpick. If toothpick comes out clean means cake is properly baked.
18. Let cake cool down for 15 minutes.
19. Thereafter invert the cake on cooling rack and let it cool down completely.
Eggless strawberry Upside down cake is ready. Enjoy.

Eggless Strawberry Upside down cake recipe
Ingredients
1 cup = 200 ml
- 1 Cup Whole Wheat flour (155 gram)
- 1/2 Cup strawberry puree (110 gram)
- 3/4 cup powdered sugar of your choice (we used bura sugar)
- 1/4 cup oil (50 ml)
- 1/4 cup curd/yoghurt (50 ml)
- 1 tsp baking powder
- 1/4 tsp baking soda
- Pinch of salt
- 1 tsp vanilla essence
- 6-7 strawberries for topping
Instructions
- Grease a cake tin and place a butter paper in it. Also grease the butter paper.
