Bread pakoda in air fryer with step wise pictorial and video method.
Bread Pakoda or bread fritters is a famous Indian Street food made with stuffed bread coated with spiced gram flour batter and then deep fried.
Hailing from North Indian cuisine, especially from Punjab, this is not just a street food but this is one of the most amazing rainy day appetizer too.
By saying this, not necessarily mean we are strictly talking about bread pakoda but yes about pakoda, be it of Plain bread, onion, potato, lotus stems or any of the veggies.
There are two ways to make bread pakoda: one with stuffing and another without stuffing.
The one without stuffing is very common as it is very easy and quick to make. Just cut slice of bread, dip in batter and deep fry. As simple as that.
And the another one comes with little detailing. You need to prepare the potatoes stuffing, which is something very common in most of the recipes like aloo ka paratha, samosa etc, though with a little difference.
The spices added in the stuffing as well as batter may vary depending on your choice and availability of ingredients but more are less, they are easily available in every pantry.
INGREDIENTS USED
POTATOES : When it comes to filling of any snack, potatoes are always a winner. However it is up to your wisdom that what other ingredients you can use in replacement to the potatoes. But traditionally, this is strictly potatoes only which are used for filling in bread pakoda.
BESAN/GRAM FLOUR: As earlier discussed about potatoes that they are part and parcel of every filling, likewise, besan is also a part of every coating.. lol. You may add a tablespoon of semolina or rice flour for extra crispness.
BREAD : You may use any bread of your choice, be it white, brown or wheat flour bread.
SPICES : This recipe uses regular spices, the details of which is given in the list of ingredients.
STEP WISE PICTORIAL RECIPE OF BREAD PAKODA IN AIR FRYER
PREPARATION OF POUNDED MASALA
Add cumin seeds, coriander seeds, fennel seeds & black pepper corns in a mortar.
Crush them coarsely. You can do this process in the grinder jar as well.
MAKING OF STUFFING
Add oil in a pan. Add ginger, green chilies and cashews. Roast till ginger turns slightly brown.
Add pounded masala and roast for couple of seconds.
Add hing, red chilli powder, garam masala and raisins. Roast for couple of seconds till raisins puff up.
Add boiled and mashed potatoes. Add salt, coriander leaves and dry mango powder.
Roast potatoes for 5-6 minutes.
MAKING OF BATTER
Take gram flour in a pan and dry roast for 5-6 minutes. This step needs to be done in case of cooking bread pakoda in air fryer only and not in case of deep frying.
Take the besan out in a bowl. Add rice flour, carom seeds, turmeric powder, salt, baking soda and oil.
Add water little by little to make a batter. Batter needs to be slightly thin if cooking in air fryer otherwise keep it thick if deep frying.
MAKING OF PAKODA
Take 2 slices of bread and spread green chutney on one side of both the slices. However you can skip this step if don’t have green chutney.
Spread potato stuffing on one slice of bread.
Place another slice of bread, facing chutney side to stuffing, making it a sandwich.
Cut bread slices into halves giving them a diagonal shape. Keep aside.
Before going further, prepare the air fryer basket by arranging butter paper (with holes done with toothpick) in an air fryer basket and grease it with oil.
Now dip the sandwich in batter from both the sides.
Drip off the excess batter.
Place bread slices in the basket.
Air fry @180°C for 10-22 minutes. Our bread was done this way. If you feel that the other side of your bread wasn’t cooked properly, you can turn the side of bread pieces and air fry for more minutes.
Stuffed bread pakoda is ready. Enjoy with green chutney or tomato ketchup or any dip of your choice.

FOR POUNDED MASALA
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp fennel seeds
- 1/2 tsp black pepper corns
FOR STUFFING

- 2 green chilies (finely chopped)
- 1 tsp ginger (grated)
- 2 tbsp cashews (optional)
- 2 tbsp raisins (optional)
- 1 tsp garam masala
- Pinch of hing/asafoetida
- Red chilli powder to taste
- 1 tbsp dry mango powder
- Salt to taste
- 2 tbsp coriander leaves (roughly chopped)
- 1 tbsp oil

- 1 cup besan/gram flour
- 3 tbsp rice flour (optional)
- 1 tsp ajwain/carom seeds
- 1/8 tsp turmeric powder
- 1/2 tsp salt
- pinch of baking soda
- Water as required
- 2 tbsp oil
ADDITIONAL INGREDIENTS
- bread slices as required
- green chutney as required (optional)
- Oil for greasing
