The most simple, yet one of the most delicious vegetable dish that brings together potatoes (aloo) and carrot (gajar).

Hailing from North India, this dish is such a simple which requires no detailed ingredients like ginger, garlic, tomatoes and onion.

Just potatoes, carrots and spices. Aloo Gajar ki Sabji is a dry preparation that pairs beautifully with roti, paratha, naan or even as a side dish with dal-chawal.

Not just delicious but this dish looks vibrant also as it is made pairing red carrots and pale yellow potatoes.

Though we cannot claim this dish to be a dish worth welcoming special guests or occasions, but this is something which you would love to enjoy as part of your routine meal.

TIPS TO MAKE PERFECT SABZI

Use fresh carrots as the fresh one are more juicy resulting in more flavourful sabzi.

Better to cut carrots and potatoes in equal size so that they cook simultaneously.

If you like, you can add green peas as well.

This sabzi requires very little water to cook because both carrots and potatoes release their own water while cooking.

Once both carrots and potatoes turn sift enough to eat, let them keep cooking on low flame. This will help them strain crisp exterior hence enhancing the taste.

 

 

 

 

Aloo Gajar Ki Sabji

STEP WISE PICTORIAL RECIPE OF AALO GAJAR KI SABJI :

 

 

Heat oil in a pan. Add cumin seeds and green chilies. Let cumin splutter.


Add carrots and potatoes.

Also add kashmiri red chilli powder, turmeric powder, coriander powder and salt.

Add water and mix.
Put a lid and let them cook on low heat. Don’t miss to stir at intervals to prevent the sticking.

Cook till potatoes and carrots turn soft enough to eat.

Once they are cooked, turn up the heat to lowest and let them cook for 5 minutes, while stirring frequently.

Lastly add garam masala and mix.

Sabzi is ready.

  • 200 gram carrots (cut into pieces)
  • 200 gram potatoes (cut into pieces)

  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • 1/4 cup water
