Aloo Gajar ki Sabzi is a simple, flavorful North Indian dish made with potatoes, carrots, spices, and minimal oil.

- 200 gram carrots (cut into pieces)
- 200 gram potatoes (cut into pieces)
- 1 tsp cumin seeds
- 2 green chilies
- 1 tsp kashmiri red chilli powder
- 1/4 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp oil
- 1/4 cup water
Heat oil in a pan. Add cumin seeds and green chilies. Let cumin splutter.
Add carrots and potatoes.
Also add kashmiri red chilli powder, turmeric powder, coriander powder and salt.
Give them a good mix.
Add water and mix.
Put a lid and let them cook on low heat.
Don't miss to stir at intervals to prevent the sticking.
Cook till potatoes and carrots turn soft enough to eat.
Once they are cooked, turn up the heat to lowest and let them cook for 5 minutes, while stirring frequently.
Lastly add garam masala and mix.
Sabzi is ready.
