Almond biscuit recipe | almond Cookie recipe | almond cookies with step wise pictorial and video method.
Almond cookies or almond biscuits, also called badam biscuits are the simple cookies recipe made with almonds, flour, butter and Sweetener. The highlight of this recipe is that it is Eggless.
These are such a royal Cookies that you can serve them to your special guests. Also you can gift on special occasions or festivals like diwali and Christmas.
HEALTHY ALMOND COOKIES
We have tried to make these Cookies healthy by replacing those ingredients which are not deemed healthy.
Though all purpose flour could be used but we have added whole wheat flour.
Likewise refined sugar is replaced with cane sugar. However you can add brown sugar or powdered jaggery.
Oats are also made part of these cookies. Oats not only made them healthy but provided a grainy texture and you feel like having cardboard in your mouth. Lol.
VEGAN & GLUTENFREE OPTIONS
This recipe has butter and milk which are non vegan. But you can easily replace butter with almond butter or some vegan butter.
Also, milk can be substituted with almond milk or some plant based milk.
Likewise, for gluten intolerants, whole wheat flour can be dropped and almond flour can be used.
STORAGE OF ALMOND COOKIES
These cookies must be stored in an airtight container and remains good for about a month.
But do keep in mind that before storing the cookies in airtight, let them cool completely first. If you put the warm cookies, they will turn soggy.

STEPWISE PICTORIAL RECIPE
- Put sugar along with 1/4 cup of almonds in a grinder jar and grind them to a powder.
- Add butter and grinded mixture into a bowl.
- Whisk them with electric beater. However you can use wire whisk also.
- In 2 to 3 minutes (with electric beater), butter will turn creamy.
- Now add wheat flour, oats, chopped almonds, salt, baking soda and almond essence.
- Whisk them again so that everything get mixes together well.
- Now by using your hand, start bringing everything together so that a dough can be formed. Remember, only bring the mixture together and don’t knead it.
- If the mixture is not binding together, add very little of milk. We only need to add a tsp of milk for making a dough.
- Once dough gets ready, cover it with a moist kitchen towel. Put lid on the bowl and place bowl in refrigerator for 30 minutes. Alternatively, you can cling wrap the dough and then refrigerate.
- After the said period, take the dough out and make small lemon size pieces of the dough. We could made 19 pieces.
- Now roll each piece into a ball by rolling them between your palms one by one.
- Arrange all balls on a baking tray lined with greased butter paper or parchment paper. See, keep distance in each ball as they will spread a little on baking.
- Take 2 pinches of crushed almonds and press gently on the top of ball. Repeat the same for all balls. Note that don’t press with pressure otherwise balls may break.
- Bake @160°C in a preheated oven in the middle rack with both the rods on for 20 minutes.
- Once done, take the tray out and let biscuits cool down completely.
- Almond biscuits are ready.

NOTE
- Don’t grind almonds in one go but blitz by doing stop go stop method, otherwise almonds will begin to release oil instead of turning only powder.
- If using salted butter, then skip adding additional salt.
- If you don’t have almond essence, you can add vanilla essence or cardamom powder.

- 1/4 cup Almonds
- 1/2 cup cane sugar or regular sugar or jaggery powder
- 1/4 cup butter unsalted/half stick
- 1/2 cup whole wheat flour
- 1/4 cup oats
- 2 tbsp almonds roughly chopped
- Pinch of salt
- 1/2 tsp baking soda
- 1/2 tsp almond essence or vanilla essence or cardamom powder
- 1 tsp milk more/less
- 1 tbsp crushed almonds for garnish
- Oil for greasing butter paper on baking tray

Posted at 17:35h, 10 MayJust made these cookies! Brilliant taste..I think my butter had some issue, so it became too creamy and didn’t come together as a dough. I compensated with some extra flour and refrigeration, and voila! I can’t stop eating them!
