Vegan Funfetti Sugar cookies recipe | Funfetti sugar cookies with step wise pictorial and video recipe.

Simple butter cookies engulfed with colourful bright and shining Sprinkles are the one which defines the Christmas in the real sense and makes the perfect festive treat.

Though these are the very basic cookies made using regular ingredients but addition of just one ingredient booms this recipe to another level.

White based cookies having the vibrant, vivid and psychedelic funfetti having crackly exterior and chewy interior are definitely something enough to blow up your mind.

The other beauty of these vegan sugar cookies is that you need not to follow it to the T. Pick any of the sugar cookies recipe, add corn starch and Sprinkles and this is done. You have beautiful looking Cookies in your hand.

We have been hearing that rainbow appears (sometimes) in the sky after the rains but this is the first time we witnessed rainbow inside the oven. Lol.

The day we made these cookies, our 6 years old niece visited us and at that time, cookies were just out of the oven and were slightly warm.

Her eyes got trapped by the sparkling beauty of the cookies and she began with the puppose to taste only 1 and finished all in no time as if it was her dinner…lol.

Somehow we manage to escape 1 to 2 cookies from her just to verify how they taste, and God’s oath, they were amazing.

The purpose of sharing the story is just to tell that how much love these eggless funfetti cookies are going to receive from your kids, once you try and serve them.

VEGAN FUNFETTI COOKIES INGREDIENTS

 

BUTTER : As we want to keep it vegan, so using the vegan butter. But if you have no compulsion to make it only vegan, then you may use any butter for these cookies.

Also the butter used in the recipe is unsalted. But if you are using salted butter, then avoid adding the extra salt in the recipe.

SUGAR : Prefer to use the sugar in the powdered form only. Instead of using regular refined sugar, you can use brown or cane sugar and even jaggery also. But do note that any other dark coloured sugar may spoil the ultimate look of the cookies.

ALL PURPOSE FLOUR : APF can be replaced with Whole wheat Flour or both in the equal ratio. If you want to make the cookies gluten free, then try some gluten free flour.

CORN FLOUR : Corn flour also called corn starch  is added to make the cookies crumbly and tender. You may skip this ingredient but still highly recommended.

BAKING POWDER & BAKING SODA : These are the leaving agents helps to create the cookies soft and light.

SALT : A pinch of salt enhances the flavors. But if you are using salted butter, don’t add this extra pinch.

VANILLA ESSENCE : This is for fragrance in the cookies.

SPRINKLES : These cookies are all about Sprinkles. We have added just a tablespoon of them in the batter. Otherwise only coated them on the upper side of the cookies immediately before refrigeration.

WHY REFRIGERATION OF FUNFETTI COOKIES DOUGH IS IMPORTANT?

 

This is one such step which is usually underrated but is the important of all the steps.

Refrigeration of dough solidify the fat content in the cookies dough and as a result, cookies don’t fell flat immediately while baking because they expand more slowly.

If you skip this important step, you are likely to end up with flat cookies.

 

 

STEP WISE PICTORIAL METHOD OF Vegan Funfetti Cookies Recipe

 

  1. Take butter and sugar in a bowl.
  2. Beat them with electric beater until they turns soft and fluffy. You can use hand whisk too to beat the mixture.
  3. Add flour, corn starch, baking powder, baking soda, salt and vanilla essence.
  4. Give them a good mix.
  5. Add 1 tbsp of sprinkles.
  6. Mix well forming a soft dough.
  7. Scoop out a tsp of dough using a scooper or spoon.
  8. Roll the dough into a ball inside your palm.
  9. Gently press the ball very lightly giving it a flat cookie shape.
  10. Coat one side of the cookie with Sprinkles.
  11. Likewise make more cookies and arrange them on a baking tray lined with greased butter paper or parchment paper. Do keep some distance between all the cookies because they are going to expand while baking.
  12. Put the tray in refrigerator for 1 hour.
  13. Bake them in a preheated oven @180°C  for 12 to 15 minutes or until their corners begin to turn slightly brown.
  14. Once done, take them out and let turn cool completely.

1 cup = 200 ml

  • 1/2 cup 100 gm vegan butter (use dairy butter if not vegan)
  • 1/4 cup Powdered Sugar 63 g
  • 3/4 cup All purpose flour 100 g
  • 1 tsp Corn starch/corn flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1/2 tsp vanilla essence
  • 4-5 tbsp Sprinkles
