WHAT IS PULAO?

 

Pulao is a one pot rice dish made by cooking rice with spices, herbs & sometimes stock.

There’s a huge list of pulao recipes made in India varying from vegetable/s pulao to non-veg pulao.

Matar pulao, soya chunks pulao, mint pulao, tawa pulao, aloo pyar pulao, Coconut milk pulao, mix veg pulao, zarda pulao, chicken pulao, matan pulao and so on, the list is endless.

Pulao has always been a saviour recipe as and when you don’t find something in exact proportion to make or in a haste or reluctant in cooking anything detailed.

One tomato, few florals of cauliflower, handful of peas, 2 small carrots, a tiny capsicum and, more or less, any other vegetables, many of the times, find a place in the vegetable basket of our refrigerator.

These few bits aren’t sufficient to make a complete meal in itself, and hence, they generally turn into pulao.

ACHARI PULAO

 

Achar is Hindi word for pickle and this recipe is about pulao using pickle.

Pickle in India is used as a condiment which is eaten with routine meals. However it is also widely eaten with just paratha.

At times, you don’t have even those bits of veggies, we have been talking about herein above.

Then this achari pulao is definitely going to safeguard you from hunger pangs.

HOW THIS IS DIFFERENT TO OTHER PULAO RECIPES ?

 

If you have ever cooked pulao, which probably might be for sure, you can easily spot the difference.

Having multiple veggies in hand or even making pulao with just one, you need to add a stock of spices to work the pulao best for you.

You can’t expect a good flavourful pulao unless bayleaf, cardamom, cinnamon, cumin, coriander powder, garam masala, red chilli powder and turmeric goes into it.

But have a look at the list of ingredients you need to have for making achari pulao.

This is definitely going to give you shockers.

There’s nothing from amongst the spices mentioned above, not it has any vegetables. And still it tastes the best.

SITUATIONS WHEREIN THIS PICKLE RICE ARE THE BEST TO PREPARE :

 

This achari pulao is the easiest and fastest recipe than any other pulao and in no case, this is lesser to other fancy pulaos. You can easily go for it :

1. When there’s no veggies at home.
2. Not in a mood to cook at length.
3. Best suited to students living out.
4. Have paucity of time.
5. Extremely busy at work, and/or
6. Wanna eat something delicious yet easy.

Step wise pictorial recipe of pickled rice

 

  1. Wash rice and soak them for about 20 to 30 minutes.
  2. In the mean time, take pressure cooker and add oil in it.
  3. Add grated ginger and green chilli.
  4. Saute till ginger turns lightly brown.
  5. Add onion after cutting it lengthwise.
  6. Cook for 3 to 4 minutes. Don’t let onion turn brown.
  7. Roughly chop mango pickle pieces by removing their seed coat (the hard non edible part inside mango pickle). Also scrub the fleshy part from the mango seed coat.
  8. Add chopped  pickle when onion becomes slightly pink and translucent. Stir.
  9. Drain water from rice and add rice to pressure cooker.
  10. Also add 2 cups of water, salt and coriander leaves. Give them a mix.
  11. Cook for 2 whistles and it’s done.
  12. Pickle rice are ready to be served. Enjoy hot with curd or the way you like.

NOTES

  1. Take any rice you use in your daily cooking. However basmati rice are the best to make this recipe.
  2. Onion is partly cooked so that it retains its crunch. If you don’t like half cooked onion, then let it turn completely brown.
  3. Be careful while adding salt. Remember, pickle already have a salt.
  4. If using chilli pickle, no need to add additional green chilli.
  5. If you too are using mango pickle, no worry if you add that hard inner part of pickle too while cooking. It can always be removed after pulao is cooked.

  • 1 cup rice
  • 3 pieces mango pickle or use any pickle
  • 1 medium onion
  • 1 tsp ginger grated
  • 1 green chilli
  • Salt to taste
  • 2 tbsp oil
  • 1 tbsp coriander leaves
  • 2 cup water plus additional for washing & soaking rice
