Air Fryer Phool Mathri Recipe (Baked in Oven Too) with step wise pictorial and video method.
A simple regular mathri designed in a way that it looks like a phool (flower).
Mathri is a crispy Indian snack made with flour, carom seeds, salt and oil and cooked by deep frying.
Although mathris have no season to enjoy but it is most commonly prepared during the festival of Deepawali. And if it is shaped like a flower, it is for sure a Diwali special Phool Mathri.
Baked flower shaped mathri is usually round but we have tried a different look by giving it a drop look using drop shaped cookie cutter. You can shape these air fryer Phool Mathri for Diwali the way you like.
It is pertinent to mention here that these oven baked Phool Mathri recipe is being loved not just for their crispy and crunchy texture but for the beautiful appearance as well. If you are serving these crispy Phool Mathri without deep frying to your guests with tea or pairing it with some mithai in a pack and gift on Diwali, you will surely earn loads of appreciation.
Here in this post, we have shared two versions of phool Mathri recipe; oven baked and air fried.
Though air fryer does it quickly but not everyone owns an air fryer. So we have shared the oven version as well. And in case you don’t have an oven too, then you can deep fry them.
So you can choose whichever suits you the most.
And remember, once you make these traditional Phool Mathri in air fryer, first let them cool completely, only thereafter put them into air tight container.

Step Wise Pictorial Recipe of Air Fryer Phool Mathri Recipe (Baked in Oven Too)
Take all purpose flour, semolina, black pepper powder, carom seeds, baking soda, salt and oil.
Firstly rub the flour mixture with your hand and bring it to a breadcrumbs consistency.
Once it is done, knead a firm dough with water.
Cover it and rest for 30 minutes.
Now take a ball out of the dough.
Roll it, on a clean shelf, neither too thick not too thin.
Use a cookie cutter of your choice and mark cuts on the roti. Likewise create such mathris from the entire dough.
Take a plucker and create dents on each mathris.
Either deep fry them, bake or air fry.
For air frying, arrange the mathris in the basket without overlapping one another.
Brush or spray little oil on each one of them.
Air fry @180°C for 7 minutes.
Take the basket out and turn all the mathris.
Further air fry at the same temperature and for the similar duration i.e. @180°C for 7 minutes.
Once done, bring them out. Let them cool down completely.
For baking in oven, bake in the preheated oven @180°C for 18-20 minutes.
Phool Mathri are ready. Once cool down completely, store in Air tight container and serve with tea.
NOTES
- All purpose flour can be replaced with whole wheat flour or both in the ratio of 50:50.
- Semolina is optional but recommended, as it makes the phool Mathri more crispy.
- Oil can be replaced with desi ghee but ghee will turn the vegan snack into vegetarian.

1 cup = 250 ml
- 2 cup Maida
- 1/4 cup semolina
- 1/4 cup oil
- 3/4 tsp carom seeds
- 1 tsp salt
- 1/2 tsp black pepper powder
- 1/4 tsp baking soda
- Water as needed
