Maa Ki Dal Ka Madra Jammu Special | Saboot Urad Dal Ka Madra Himachal Special with step wise pictorial and video method.

Maa” is basically the name of the daal which is whole urad dal, black in colour and often pronounced as ‘Maa’ in Dogri accent, which is basically “Mah.”

And “Madra” is a curry wherein the lentils are cooked in the thick gravy of curd using no onion, no ginger, no garlic and no tomatoes. It’s just a particular lentil, curd and spices.

Here what we have shared in not just Maa da Madra Dogra recipe from Jammu only but this is also a Himachali mah ki dal recipe.

Hence one recipe belonging to 2 different States.

The word “Madra” is not a complete recipe name in itself but it signifies the wholesome dish made in a particular way. That’s why any lentil cooked in a particular way is called Madra. Even there’s a popular recipe from Jammu which is sweet Madra made from dry fruits. Also there’s popular Madra recipe from Himachal named Chana Madra Recipe made with white Chickpeas.

With the change in time, traditions change and so are the ways to celebrate them, but still traditionally madra is associated with Dham style recipe, which is a kind of large feast, mostly religious and where a large  gathering of people are invited and made to serve food while they are made to sit in a row.

If you have seen different titles for the recipe, then let us tell you that Saboot Urad Dal is called by other names as well. In english it is whole black gram, in Dogri and himachali acent, the same lentil is called Maa or Mah, as already mentioned. In common language, it is also called Sabut Urad Dal or Saboot Kali dal. But at the end, all are same.

The most unfortunate part is that though it is traditional Dogra maa ki dal but inspite of being so, this Jammu special maa da madra is not available in any of the renowned restaurants and hotels in Jammu.

Dishes like sabut urad dal madra recipe represent the kind of simple, traditional food associated with the region but they are diminishing with the growth of Western culture.

Luckily, regional dishes like Maa ki dal ka madra recipe often survive through homes and generations rather than through restaurant menus.

So you too try and enjoy this Jammu delicacy.
