Pineapple filled Vegan Cookies Recipe with step wise pictorial and video method.
Gooey, sweet and sour inside and crispy outside, these pineapple cookies are nothing less than a tropical delight.
Due to the festive season, now a days every baking is resolving around chocolates and other bright fancy ingredients, but these pineapple filled vegan cookies bring a fresh unusual twist.
There were few pineapple slices lying in the refrigerator and this time we didn’t want to make Pineapple Upside Down Pancakes or Grilled Pineapples or any drink like Pina Colada. So here we are with an amazing way to use the pineapples.
Though this recipe doesn’t use pineapple slices directly but pineapple jam and that jam is also homemade prepared from the said pineapple slices. Just blend pineapple slices with sugar and simmer until glossy.
These are lots of cookies recipes made using fruit and we too have made few like Mango cookies, orange cookies but the present recipe is different in a way that it has pineapple inside the cookie in it’s gooey form.
No wonder if you call it a surprise cookies because it has a hidden burst of fruity jam which is enough to excite kids and adults.
From the appearance of the cookies, you may find it to be very complicated using fancy ingredients but the fact is altogether opposite to if. They call for basic and regular pantry ingredients available in every house, especially who bakes.
We wanted to keep it vegan so used plant based butter but if you are not vegan, go for any butter you use in your routine.
Also all purpose flour can be substituted with whole wheat flour or both in the ratio of 50:50.
Even there’s a sub for pineapple essence as well. Though the cookies being pineapple, the essence should also be the same at the first place but in case you don’t get that, vanilla essence is the better alternative.
Like every cookies, it is perfect with evening chai, coffee, or as a snack box treat for kids. And over the top, great for gifting during holidays.
STEP WISE PICTORIAL RECIPE OF PINEAPPLE FILLED VEGAN COOKIES RECIPE
Take butter in a bowl and whisk it until soft and creamy. Add powdered sugar and mix it too with butter.
Put a sieve on the bowl and add flour, baking powder, baking soda and salt.
Sift then into the bowl. Add pineapple essence and mix.
Now bring everything together into a dough using your hand.
Take a small portion of dough and flatten it on your palm. Put a thick bolb of pineapple jam measuring around 1 tsp.
Seal it inside the cookie dough.
Shape it into cubes. Arrange them on baking tray lined with greased butter paper or silicon mat. If you find the cracks on your cookies, apply water on them. It will work like a glue.
Cut the top of cookies in criss cross pattern without cutting through the cookies. This is done just to give cookies a pineapple look, so can skip this step. Put the cookies in refrigerator for 30 minutes.
Bake them in preheated oven @180°C for 25-30 minutes on until cookies turn slightly brown.
Take them out and let them cool completely. Enjoy.
NOTES
- To make quick pineapple jam for this recipe, grind pineapple slices to a smooth puree. Add to the pan alongwith sugar and cook on low heat while stirring continuously until it becomes thick. Then refrigerate on cooling till thick.
- If you will not cease the cracks properly, pineapple jam may ooze out while baking.

1 Cup = 200 ml
- 1 cup/137 gram all purpose flour
- 1/2 cup/100 ml butter (we used plant based butter)
- 3 tbsp/40 gram powdered sugar
- 1/4 cup pineapple jam
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp pineapple essence
- Pinch of salt
Instructions
