Vegan Avocado Cucumber Sandwich Recipe with step wise pictorial and video method.
Creamy avocado and crunchy cucumber when combines together make this most delicious and simultaneously healthy sandwich which everyone would love to enjoy.
Although this recipe is all about healthy sandwich but it’s beautiful appearance can’t be ignored at the same time.
The thin strips of cucumber are arranged in such a way over the bread which has turned a simple sandwich into a masterpiece.
No doubt healthy eating must be the priority and this sandwich stands on this parameter completely but if a healthy food is accompanied by a beautiful appearance, its like icing on the cake.
Not just the kids but this sandwich has the tendency to lure the adults alike with its visual.

If you want to keep it vegan, you can go for scrambled tofu, hummus, vegan mayonnaise instead of or along with avocado.
For vegetarian version, you can choose vegetarian mayonnaise, cheese, Cream cheese, paneer or hung curd.
Feel free to add chopped onion, tomatoes or any veggies of your choice which can go easily in sandwich.
Besides you can go for sweet corns, sprouts, micro greens and fresh herbs.
STEP WISE PICTORIAL RECIPE OF VEGAN AVOCADO CUCUMBER SANDWICH RECIPE
Scoop out the flesh out of avocados and add in a bowl.
Mash with the fork. Add lemon juice, salt, black pepper powder and red chili flakes. Mix well and keep aside.
For stuffing, wash and cut the cucumber (with skin intact) into paper thin roundels. You should have about 28-30 roundels approx. We have used a slicer but you can do it with knife as well. But if using knife, try to keep the slices as thin as possible.
For outer layer, cut the cucumber into long strips using peeler and this too should be paper thin. You should have this one too 18 to 20.
Arrange the cucumber slices (of both shapes) on paper napkin and tsp another napkin to pat dry the cucumber. Keep aside.
Take a bread slice and spread avocado mixture on one of its side.
Arrange the round cucumber roundels covering the entire spread.
Place another slice of bread over the cucumber roundels. Again spread avocado mixture on the top of the bread.
Now arrange the cucumber strips diagonally without overlapping but touching one another. (A video is attached to this post for better understanding).
Trim of the bread including cucumber strips edges from all the 4 sides.
Now cut the bread diagonally giving it an authentic sandwich triangle shape. Enjoy.

- 2 tbsp lemon juice
- 1/4 tsp black pepper powder
- 1/2 tsp red chilli flakes
- Salt to taste
- 3-4 cucumbers
- 8-10 bread slices (vegan)
