Scoop out the flesh out of avocados and add in a bowl.
Mash with the fork.
Add lemon juice, salt, black pepper powder and red chilli flakes.
Mix well and keep aside.
For stuffing, wash and cut the cucumber (with skin intact) into paper thin roundels. You should have about 28-30 roundels approx. We have used a slicer but you can do it with knife as well. But if using knife, try to keep the slices as thin as possible.
For outer layer, cut the cucumber into long strips using peeler and this too should be paper thin. You should have this one too 18 to 20.
Arrange the cucumber slices (of both shapes) on paper napkin and tsp another napkin to pat dry the cucumber. Keep aside.
Take a bread slice and spread avocado mixture on one of its side.
Arrange the round cucumber roundels covering the entire spread.
Place another slice of bread over the cucumber roundels.
Again spread avocado mixture on the top of the bread.
Now arrange the cucumber strips diagonally without overlapping but touching one another. (A video is attached to this post for better understanding).
Trim of the bread including cucumber strips edges from all the 4 sides.
Now cut the bread diagonally giving it an authentic sandwich triangle shape.
