Vegan Pineapple Upside Down Pancake Recipe with step wise pictorial and video method.
These dairy free pancakes are a delightful twist on classic pancakes, featuring caramelized pineapple slices perfect for a refreshing breakfast or dessert.
When it comes to pancakes, the most common name is banana pancake beyond that we have made pumpkin pancakes , bottle gourd pancake and here’s pineapple up side down pancake.
These pancakes are altogether different in the sense that they carry the whole slice of pineapple and as such carries the intense flavours of the fruit.
But these pancakes can be made even when you don’t have the pineapple slices. Instead of milk, add fresh or canned pineapple juice and enjoy your delicious pineapple pancakes.

STEP WISE PICTORIAL RECIPE OF VEGAN PINEAPPLE UPSIDE DOWN PANCAKE RECIPE :
CARAMELIZING OF PINEAPPLES
Take a non stick pan or tawa and apply coconut oil on it and also sprinkle some brown sugar. Arrange pineapple slices, as much your pan can accommodate. Cook the pineapples for 3-4 minutes.
Sprinkle some brown sugar on top of pineapple slices. Flip them. Cook from other side as well until pineapples get caramelized from both sides. Keep aside.
MAKING OF BATTER
Add flour, baking soda, baking powder, sugar, salt, pineapple essence and coconut oil in a bowl. Gradually add milk and keep mixing.
Get a thick yet flowing consistency of batter.
MAKING OF PANCAKES
Apply some coconut oil on non stick pan or tawa. Spread a bit of batter.
Let it firm up for a minute.
Then place a caramelized slice of pineapple. Put a piece of glazed cherry in the middle hole of slice. (This step is optional).
Let the batter turn full firm. Sprinkle bit of coconut oil over the top. Flip the pancake.
Cook from both the sides until brown.
Enjoy hot after drizzling maple or dates syrup.
NOTES
- If you don’t have pineapple essence, you can use vanilla essence.
- For intense pineapple flavour, you can reduce the quantity of milk and balance that portion with pineapple juice.
- Glazed cherries in the middle of totally optional, but they will give a beautiful look to your pancakes.
- For vegetarians, coconut oil and oats milk can be replaced with butter and regular milk respectively.

1 cup = 250 ml
FOR CARAMELIZED PINEAPPLE
- 6 pineapple slices
- 2 tbsp brown sugar
- 1 tbsp coconut oil

- 1 cup - All purpose flour (or whole wheat flour)
- 3/4 cup milk of your choice (we used oats milk)
- 2 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1 tsp pineapple essence (or vanilla essence)
- 1 tbsp plus extra coconut oil
- 6 glazed cherries optional
