Almond burfi recipe | Badam barfi recipe with step wise pictorial and video method.

Also called by the name Almond fudge, this is such an easy to make recipe for any festival season.

Diwali is around the corner and we all are looking forward to recipes which can be made part of diwali celebrations. And when you talk about diwali, this is obviously the sweets which occupy the front desk.

Although you are not bound to stick to diwali only, but this recipe can be tried and made for any special occasion or festival.

Other than almonds, there’s not any special or expensive ingredient which is part of this recipe. We can bet that you will find it to be the most easy recipe amongst all the burfi recipes.

INGREDIENTS USED

ALMONDS: Where in most of the almond burfi recipes, you will find that almonds need to be soaked for long hours but as we didn’t have this much time in hand, so made it instantly by boiling almonds, because the purpose is just to make the skin easily peelable.

SUGAR : Now coming to the sweetness. Usually the quantity of almonds and sugar is equal but if you like the sweetness on down side, just reduce the amount of sugar, but not beyond one or two tablespoons.

WATER : Water is needed to melt the sugar.

SAFFRON SOAKED MILK: This will provide richness to the burfi. Just put few strands of saffron in warm milk and keep aside for 10 minutes.

CARDAMOM POWDER: Obviously this is there for the utmost fragrance.

DESI GHEE: This fact need not to be mentioned that Indian sweets are incomplete without ghee. Although you may skip ghee but this is highly recommended. We have used homemade desi ghee.

STEP WISE PICTORIAL RECIPE OF BADAM BARFI

  1. Boil almonds in water for 5 minutes.

2. Remove them from the pan and rinse with cold water.

3. Remove their skin and pat dry them on clean kitchen towel.

4. Put the almonds in a grinder jar and grind them. Keep aside.

5. Take a non stick pan and add water and sugar in it.

6. When sugar melts and water begins to boil, add Cardamom and saffron soaked milk.

7. Also add almonds powder & desi ghee.

8. Cook by stirring them continuously until almonds powder begin to leave the sides of the pan.

9. Immediately transfer the mixture on greased butter paper and spread it.

10. Mark cuts in the shape of your choice and let it cool down completely.

Almond burfi is ready.

NOTES

If you like smooth textured burfi, then grind almonds to smooth paste. We love the grainy texture of burfi, so we grinded the almonds to coarse.

1 cup = 250 ml

  • 3/4 cup almonds (130 gram)
  • 3/4 cup sugar (190 gram)
  • 1/2 cup water
  • 2 tbsp saffron soaked milk
  • 1/2 tsp Cardamom powder
  • 1 tsp desi ghee
  • Water for boiling almonds

Instructions
