INGREDIENTS USED

The traditional belief that vegan desserts compromise on taste takes a back seat as the Vegan Fresh Fruit Cake effortlessly disproves this myth. The list of ingredients goes like this:

FLOUR : using whole wheat flour in place of all purpose flour makes this cake a healthier option. However feel free to use all purpose flour or both the flours in the ratio of 50:50.

FRUITS : There is no strick bar to the fruits and use any fresh fruits you like. We have added apple, orange, grapes, papaya, pomegranate and strawberries. You can go ahead with any seasonal fruits. However it is recommended not to add highly water based fruits like watermelon.

Fruits should be washed and cut into very thin slices/pieces. Apples are added in water after cutting because when they come in contact with air, get oxidised and turn brown, similarly like potatoes.

SWEETENER : we have used brown sugar for the sweetner. You can use white sugar but better to powder it first so that it get dissolved easily.

MILK : As the intentions to make this Cake Vegan, we have added coconut milk. You can use any other plant milk of your choice.

Otherwise, you can use any other milk of your choice and even you can go to the extent of using water replacing milk.

OIL : This recipe uses vegetable oil with   no smell and taste. Only such kind of oil should be used which has no strong smell and taste like mustard oil.

VANILLA : Vanilla essence is added for aroma. In place of it, you can add mix fruit essence as well.

LEAVENING AGENTS : Vinegar, baking powder and baking soda and baking powder are added as Leavening agents. When vinegar comes in contact with baking soda, it creates carbon dioxide bubbles causing the cake to rise and giving it that light, airy texture.

Vegan Fresh Fruits Cake recipe

STEP WISE PICTORIAL AND VIDEO RECIPE OF VEGAN FRESH FRUITS CAKE RECIPE 

 

1. Add 1.5 cup coconut milk In a bowl and add 1 tbsp white vinegar.

2. Mix well and rest for 15 minutes.

3. In the meantime prepare the fruits. Wash and thinly chop them. We have used apple, orange, grapes, papaya, pomegranate and strawberries. After chopping them, they should come to 2 cups together. Keep chopped apple in water to avoid oxidation.

4. After 15 minutes, add 1/2 cup oil and 1 cup brown sugar into the coconut milk.

5. Give them a good mix.

6. Put a sieve on the bowl and add 2 cup whole wheat flour, 1 tsp baking powder, 1/2 tsp baking soda and 1/2 tsp salt.

 

7. Sift into the bowl.

8. Add 1 tsp vanilla essence

9. Give it a gentle mix.

10. Add 2 tbsp flour in fruits.

11. Mix well.

12. Add fruits to the bowl.

13. Mix well but don’t overdo.

14. Drop the batter into 9 or 10 inches greased cake tin. (oops, we accidentally missed the shoot of batter dropping into the cake mould.

15. Bake in preheated microwave on convection mode for 1 hours @180 degree Celsius. If baking in oven, bake for the similar temperature and timing in middle rack with both the rods on.

16. Once done, check by inserting a toothpick and if it comes out clean, it means cake is thoroughly baked.

17. Cool completely on cooling rack.

Invert and enjoy after slicing.

  • 2 cup + 2 tbsp whole wheat flour (273 grams)
  • 1 cup sugar of your choice (240 gram - we used brown sugar)
  • 1.5 milk of your choice (375 ml -we used coconut milk)
  • 1/2 cup oil (125 ml)
  • 2 cup fresh fruits of your choice (chopped)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp white vinegar
  • 1 tsp vanilla essence
