Vegan Cookies with Salted Pistachios with step wise pictorial and video method.

Sweet, crisp and deliciously rich, these cookies are nothing less than a royal gift to yourself as their each bite is a class.

Generally when it comes to making anything which calls for Pistachios and that is sweet, we resort to the unflavored pistachios.  But this time we were having these shelled salted pistachios and wanted to create something out of it, but we were little hesitant because of the high amount of salt in them.

Hence these cookies were on trial and they came out unbelievably delicious and got the superb way to used salted pistachios.

Many might be thinking or even may question that why to look for a recipe with salted pistachios when it can be eaten as it is just like a dry fruit!

But we did so for a creative twist by turning them from dry fruit to snack. More so, we wanted to make pistachios cookies since long and there was the occasion to get this pistachios at home, which was over by now, so wanted to convert them into something one can eat in routine.

These cookies are so rich in their overall profile that they are worth decorating your tea table or the gift box even on the special occasions and festivals like Diwali because why should Kaju Katli have all the fun. Lol.

Not just diwali but these can be turned into a great snack for Christmas as well.

It can stay good for 8 to 10 days in air tight container.

 

 

Vegan Cookies with Salted Pistachios

STEP WISE PICTORIAL RECIPE OF VEGAN COOKIES WITH  SALTED PISTACHIOS

 

Add pistachios and sugar in a grinder jar. The quantity of all the ingredients is given in the recipe card below.

Grind to a fine powder.

Take butter in a bowl and also add powdered mixture.

Whisk them until soft and creamy texture.

Then add whole wheat flour and baking soda.

Whisk again so that everything incorporates so well.

Add vanilla essence and 2 tbsp of chopped pistachios.

Mix everything together into a dough.

Now take lemon sized portion and roll it between your palm.

Dip the top of this ball in finely chopped pistachios.

Arrange on baking tray lined with greased butter paper or silicon mat.

Place the tray in refrigerator for 30 minutes.

Bake in preheated oven @160°C for 25-30 minutes.

Take out and let them cool completely.

Enjoy.

NOTES

  1. Grind pistachios on pulse mode to prevent them releasing their oil.
  2. Instead of salted one, you can use plain pistachios as well. In that case, you can add a pinch of salt in it.
  3. We are making it vegan, so vegan butter. If you don’t have any such instructions, you can use regular butter as well.

Ingredients
  

1 cup = 200 ml

  • 1/4 cup - 35 grams Pistachios (we used salted pistachios)
  • 1/2 cup - 123 gram sugar of your choice (we used khandsari sugar)
  • 1/4 cup - 50 grams butter (we used vegan butter)
  • 3/4 cup - 103 gram Whole wheat flour
  • 3 tbsp pistachios (finely chopped)
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla essence
