WHAT IS BUBBLE BREAD?
Small but random sized balls of yeast fermented dough when baked together into a bread, called bubble bread.
Another most familiar name of the bread is monkey bread and pull apart bread.
This bread is also called by other names like bubble loaf, jumble bread, pinch-me cake, pluck-it cake, monkey puzzle bread, monkey brains and honey comb bread.
If you look at the recipe in a simple way, these are just the basic dinner rolls aks Indian Pav which are served with bhaji popularly called by the famous name Mumbai Pav Bhaji.
The only difference is that these are bite size pieces which kids as well as adults love to enjoy as a fun.
DIFFERENT WAYS TO MAKE BUBBLE BREAD
Bubble bread alias monkey bread is baked in different shapes with no hard and fast rule.
Right from open baking tray to cake tin to bundt pan, such bread can be baked anywhere.
This is not the official statement, but we have generally observed that bubble bread is usually baked in open baking tray while monkey bread is baked in closed pans.
In making the bubble bread, the small balls are arranged surrounding each other whereas in monkey bread, balls are arranged one on another all around the pan.
Still there’s no official difference between the two said breads.
Also bubble bread can be made plain, savoury or sweet like cinnamon bubble bread or caramel monkey bread. The plain and savoury one you can serve with dip or soup of your choice.
PRO TIPS TO MAKE PERFECT BUBBLE BREAD
1. The first and foremost factor in making the perfect and easy vegan monkey bread is the use of good quality of yeast, whether it be instant, active or fresh.
2. This is very important that yeast should have been activated very well. If the water in which you have mixed yeast has turned frothy and bubbly, this is a sign that yeast is very well activated.
It is strongly advised that in case yeast doesn’t show the signs of being active, then don’t proceed with the recipe otherwise all your efforts and ingredients will go waste.
3. Kneading of dough is another factor in making a perfect bread. You shouldn’t just assemble the dough but give it a good kneading for atleast 10-12 minutes to develop the good gluten.
4. Fermentation of dough is another important factor. Keep the dough properly covered at some warm place in the kitchen and let it rise. The timing of fermentation may vary depending on whether conditions.
5. Make the balls as smooth as possible for a perfectly textured dairy free monkey bread.
6. Do give them a milk wash before baking. It helps in attaining the golden colour from the top.
7. Once bread is baked, give it a butter wash while it is hot. This will bring a sparkling shine to the bread as well as softness.
STEP WISE PICTORIAL RECIPE OF VEGAN BUBBLE BREAD RECIPE
ACTIVATING YEAST
1.Add water and sugar in a bowl and mix well.
2. Add yeast and mix it too.
3. Rest for 10-15 minutes or until yeast mixture turns frothy and bubbly.
MAKING OF DOUGH
4. In the activated yeast, add flour, salt, oregano, chilli flakes and 1 tbsp of oil.
5. Mix everything well.
6. Now start adding water to assemble the dough.
7. Knead it for 10-12 minutes until a stretchy dough is ready.
8. Grease the bowl as well dough with a tsp of oil.
9. Cover the bowl properly and leave it at some warm place in the kitchen for 2 hours.
SHAPING THE BREAD
10. After 2 hours, the dough must have been doubled in size.
11. Knead it for a minute.
12. Now start making small and smooth balls of random size.
13. Arrange all balls on a baking tray lined with greased butter paper, surrounding each other with a slight gap between them to rise.
14. Cover the balls with a kitchen towel and again place them at some warm place in the kitchen for 1 hour.
15. After 1 hour, give a good milk wash to the balls which must have been doubled by now.
16. Bake in a pre-heated oven @200°C for 15 minutes in the middle rack with both the rods on. If the bread is properly baked but hasn’t attained the brown top yet, then shift the baking tray on top rack, set the temperature of oven at high for 1-2 minutes, but be very careful and vigilant during this time.
17. Take the bread out and brush with butter while it is hot.
Bubble bread is ready. Enjoy the way you like.
NOTES
- All purpose flour can be used in place of whole wheat flour.
- Oregano, chilli flakes and mix herbs are mentioned as optional and you can bake a simple basic bubble bread also without using any of these.
- You may also add garlic powder or fresh minced garlic in the dough, if you like.

Ingredients
1 cup = 200 ml
FOR ACTIVATING YEAST
- 1/2 cup luke warm water
- 2 tsp sugar of your choice (we used bura sugar)
- 1 tsp yeast
FOR MAKING DOUGH
- Activated yeast
- 2 cup whole wheat flour (300 gram)
- Salt to taste
- 1/2 tsp oregano (optional)
- 1 tsp red chilli flakes (optional)
- 1 tbsp + 1 tsp oil
- Water as needed
FOR BAKING BREAD
- Dough
- 2 tbsp Milk of your choice (we used plant milk)
- 2 tbsp butter (we used vegan butter)
- 1 tbsp mix herbs (optional)
Instructions
