WHAT IS THECHA?

 

Thecha is a Maharashtrian condiment made using green chilies and garlic and traditionally served with Bhakri (millet flatbread).

ABOUT THECHA BREAD

 

Thecha Bread is basically a fusion recipe wherein Thecha is used as a filling in bread recipe. We had seen this recipe long back on social media posted by a talented home chef Ms. Renu Kochar Nagarath.

And the bread is more like a pull apart bread. In this bread, the entire loaf of bread is not baked but that is separated into portions, made circles, filled with thecha, turned into crescent shape and then baked by joining them together into a loaf pan.

We then need to sprinkle it with sesame seeds or flax seeds and then bake.

ABOUT THE FILLING “THECHA”

 

Traditionally Thecha is made using peanuts and garlic, often tempered in oil and a multitude of spices such as cumin, sesame seeds, coriander seeds, hing/asafoetida, cloves, coriander leaves and grated coconut seasoning.

We have not added the ingredients like peanuts, oil, cumin, hing, cloves and coconut but if you like you can add them too.

 

INGREDIENTS USED

 

YEAST : We have used dry active yeast to make this recipe. You can use instant yeast also, which requires no prior fermentation. Just directly add to the flour and start kneading. To know more about yeast, click here.

FLOUR : This recipe uses whole wheat flour but in place of wheat flour, you can use all purpose flour too.

SEASONING: We have used salt (obviously), red chili flakes, oregano, mixed herbs and sesame seeds for making the dough. But other than salt, you can add or omit anything you can or want to.

BUTTER : The butter needs to be at room temperature, only then it will be able to get mixed with the coriander chili paste. If making the vegan recipe, then you can substitute dairy butter with vegan butter or coconut oil.

ONION 

GARLIC

CHILIES : You can either use green chilies or the red one.

LEMON JUICE : quantity as per your liking for sourness.

CORIANDER LEAVES : As this recipe calls for paste, so you can add the leaves along with stems because at the end everything is going to be crushed.

STEP WISE PICTORIAL RECIPE OF THECHA BREAD

ACTIVATING YEAST

  1. Mix sugar, warm water and yeast in a bowl.
  2. Let it rest for 10 minutes or until yeast turns frothy and bubbly.
  3. Add flour, salt, oil, red chili flakes, oregano, mixed herbs & sesame seeds.
  4. Knead a dough for 8-10 minutes using water.
  5. Grease bowl and dough and then cover the dough and let it rest at some warm place for 1:30 hours or until dough doubles in size.

PREPARATION OF THECHA

  1. In the mean time, for preparing Thecha,  add onion, garlic cloves, salt, chilies and coriander in a grinder.
  2. Grind them coarsely.
  3. Transfer the paste in a bowl carrying butter.
  4. Squeeze one lemon and mix well.

SHAPING THE BREAD  

  1. When the dough is doubled, knead it for a minute.
  2. Take some piece of dough and roll it on a clean surface into a disc after dusting some flour. If you have a larger surface, then you can take the entire dough and roll it into a larger disc. Whatever scraps are left, gather them together and roll again.
  3. Using some round utensil or round cutter, cut circles of about 3 inches diameter.
  4. Spread a bit of the thecha filling inside these circles, fold them like a crescent.
  5. Place the open side up in a Loaf pan. Stack all such circles next to each other. Refer to the given picture for better reference.
  6. Cover the loaf pan and keep aside for the second proofing for half an hour or until circles double in size.
  7. Sprinkle some sesame seeds over the circles and give a milk wash.
  8. Bake in a pre-heated oven @180°C for 25-30 minutes or until the top is nice and golden. Take out of the oven and keep to cool.

Thecha bread is ready. Enjoy warm or you may reheat in microwave for 30 seconds when serving later.

NOTES

In place of whole wheat flour, you can use all purpose flour or both in the ratio of 50:50.

Ingredients
  

1 cup = 200 ml

    FOR ACTIVATING YEAST

    • 1/4 cup warm water
    • 1.5 tsp active dry yeast
    • 1 tbsp Sugar

    FOR DOUGH

    • 1.5 cup whole wheat flour
    • Activated yeast
    • salt to taste
    • 2 tbsp oil
    • 1/2 tsp red chilli flakes
    • 1/2 tsp oregano
    • 1/2 tsp mixed herbs
    • 1/2 tsp sesame seeds
    • Water for kneading dough

    FOR THECHA

    • 1/2 stick unsalted butter (50 grams - at room temperature)
    • 1 Onion
    • 3 Garlic cloves
    • 1/4 tsp Salt (skip if butter is salted)
    • 3-4 green or red chilies
    • 1 tbsp Lemon juice
    • 2 tbsp Coriander leaves
    • Additional ingredient
    • Milk for giving wash
