Spinach corn sandwich with step wise pictorial and video method.

Packed with health and taste, this white sauce based sandwich having the nutrition of spinach and goodness of corns with flavourful seasoning is definitely a wholesome sandwich you have ever come across.

There’s hardly any one who doesn’t love sandwich. And this is the favourite snack amongst the kids.

But this is also a fact that kids hardly like spinach. And at the same time, this green leafy vegetable is so healthy that one must need to add it to their diet, be it adults or children.

So accumulating spinach with a sandwich is indeed a great idea to feed spinach to the kids. You can pack this Spinach and corn sandwich for the kids tiffin or this can such a delicious and filling dinner if you are bored of regular meals.

A VERSATILE SPINACH CORN SANDWICH RECIPE

 

The versatility of this palak corn sandwich lies in the fact that you can tweak the ingredients as well as their quantity as per your requirement.

Like you can also add hung curd or sour cream with certain adjustments.

Can totally omit mozzarella or replace mozzarella with processed cheese.

Furthermore, if you are interested in adding few of the veggies like carrots, cabbage, bell pepper, green beans or anything you would like to.

The seasoning can also be adjusted as per your taste.

INGREDIENTS USED

 

BUTTER : In many of the recipes you can replace butter with oil but not recommended in sandwiches. Though we haven’t personally tried with oil, but white sauce tastes best with butter.

GARLIC : This is one such recipe which is incomplete without garlic. The quantity of garlic can be enhanced or reduced as per your love for garlic. If you have garlic paste, that can also be used.

WHOLE WHEAT FLOUR : Whole wheat flour is added to give thickness to the white sauce. Traditionally, this is only all purpose flour which is added to white sauce but we never like using APF being unhealthy.

Alternatively you can add oats flour like we have added in making White Sauce pasta.

CORNS : Fresh, frozen or sweet corns, feel free to add any.

SPINACH : Either use fresh or frozen, it is your choice.

MILK : Milk is used in making white sauce.

SPICES : This recipe doesn’t use much spices except red chilli flakes, black pepper powder and salt. However you can add Italian seasoning also.

MOZZARELLA : Mozzarella makes the sandwich gooey and cheesy. As already stated, it can be replaced with processed cheese also.

BREAD : We have used sandwich bread but you can use any bread of your choice.

SPINACH CORN SANDWICH WITH STEP WISE PICTORIAL RECIPE

 

  1. Add butter in a pan and let butter melt.
  2. Add garlic and saute on low heat until garlic turns slightly brown.
  3. Then add flour and saute for couple of seconds.
  4. Add corns and saute well.
  5. Thereafter add spinach and give a good mix.
  6. Cover the pan with a lid and spinach cook for about 5-7 minutes.
  7. Uncover. Spinach is reduced a quite.
  8. Pour milk and add salt, red chilli flakes, black pepper powder and mix well.
  9. Let milk simmer for 2-3 minutes.
  10. Lastly add mozzarella cheese and mix.
  11. Keep the consistency of mixture slightly loose.
  12. Keep the pan off the heat and let the spinach mixture cool down completely.
  13. Take a slice of bread and spread some of the mixture evenly on all sides.
  14. Place another slice of bread over the filling.
  15. Put the bread pair over a long legged microwave rack. (In case you don’t have microwave, you can grill bread from both sides on grill pan or normal tawa/skillet after applying butter.)
  16. Apply butter on the top of the bread.
  17. Place second small legged microwave rack over the bread if you interested in giving that grilled look to your bread but don’t own a grill pan.
  18. Grill in microwave on high powder (900) for 5 to 6 minutes or until bread attains good brown texture.
  19. When bread is done from one side, turn the side of bread, apply butter, put rack over the bread and grill to desired colour and crunch.
  20. Once bread is grilled from both sides, cut it diagonally.

Enjoy with tomato ketchup or any dip of your choice.

NOTES

  1. We have used the sandwich bread which comes in a biggest size. If you are using small sized bread, then you will get more sandwiches than 8.
  2. It is suggested to keep the consistency of mixture loose at point number 11 because it will thicken more on cooling down. And you need the spreadable mixture.

Ingredients
  

  • 2 tbsp butter

  • 1 tbsp whole wheat flour
  • 1/2 cup corns boiled
  • 2 cup spinach packed
  • 1 cup milk
  • Salt to taste
  • 1 tsp red chilli flakes
  • 1 tsp black pepper powder
  • 1/2 cup mozzarella cheese
  • 8 sandwich bread slices

FOR GRILLING SANDWICH

  • Butter as needed

Instructions

  • Add corns and saute well.
  • Thereafter add spinach and give a good mix.
