Chakli is a popular Indian Snack which is so popular because of its unique appearance. Spiral coiled shape and spiky texture are some of the unique features which makes it a snack worth talk of the town.
 
Called by the name “Chakli” in Maharashtra and Gujarat and in entire North India and “Murukku” in South India, this tasty snack is mainly made using rice flour and few more ingredients.
 
Although it is made with rice flour traditionally, but still there are many more ingredients with which it is made for variation. Whole wheat flour, all purpose flour, besan, ground chana dal and urad dal are also few more flour varities with which traditional South Indian murukku is made.
 
Besides the flours, only basic spices like salt, red chilli powder, cumin, carom seeds, nigella seeds are used in this easy homemade murukku recipe. Although we haven’t added red chilli powder to keep this low oil murukku recipe in air fryer white in colour.

Now let’s talk about how it is shaped ?
 
You need a specific Chakli Maker to make it, which is also called kitchen press, which is easily available online.
 
But in case you don’t want to buy it for any reason but still wanna try making rice flour chakli recipe at home, then we have shared a method of making desi murukku maker at home with just a leftout bottle and bag. You will find the detailed process in this post as well as the video attached to this post.
 
Also traditional Murukku is made by deep frying and we have also tried few pieces of this instant rice flour chakli snack recipe likewise. But in today’s time, not everyone is happy and comfortable with the oil loaded food stuff.
 
So we have also given a try in Air Fryer and OMG….this healthy chakli recipe without deep frying came out so excellent. We didn’t feel that it’s completely non fried.
 
Though it can be eaten as a snack any time of the year, but it is commonly prepared, gifted and eaten during Diwali. So no wonder if you call it a festival special rice flour murukku recipe as well.
 
So ahead without thinking that it is tough to make. We too have made it for the first time and still it is shaped and came out so well.

MAKING OF DOUGH
 
Take water in a pan along with oil, white sesame seeds, black pepper powder, carom seeds, hing, roasted cumin powder and salt. When water begins to boil, switch off the heat. Add rice flour and mix well.
Put a lid and rest for 5 minutes. Transfer the mixture in some wide plate. Knead it into a smooth and soft dough with wet hands.
 
SHAPING CHAKLI WITH CHAKLI MAKER 
 
Take star blade and grease the cylinder and blade with oil. Add dough in the cylinder.
While pressing the piston, shake the chakli in round shape on some silicon mat, greased butter paper or greased thali.
 
SHAPING CHAKLI WITHOUT CHAKLI MAKER 
 
Take some unusable clean plastic bottle and cut it 3-4 cm below from the top using hot knife. Then cut the cap of bottle in star shape.
Take some clean leftout bag. Insert it’s closed coner inside the bottle entering from open end to top. Cut the bag from that very corner.Fold the bag from all the sides towards the bottle.
Close the lid tightly. Insert dough from the end open end of the bag. By pressing the bag from the back, make chakli on silicon mat, butter paper or greased thali.
 
COOKING CHAKLI BY DEEP FRYING
 
Add chakli in oil which should be medium hot. Initially do not touch it because it may break being soft. Once it holds it shape, turn the sides. Cook from other side as well. Do not turn them too brown. Bring out when they begin to change their colour but turned crisp.
 
COOKING CHAKLI IN AIR FRYER
 
Put chakli in air fryer greased basket. Brush little oil on them. Air fry @180 degree C for 8 minutes. Open the basket and turn the sides of chakli. Again brush the oil on other side as well. Air fry again @180 degree C for 8 minutes. Take them out and chakli is ready to enjoy.
Once completely cool, store them in air tight container and can be kept for 1 month.

NOTES
 
The consistency of dough is very important. If the dough is tight, chakli will break while shaping, and if loose, may not take a shape.

Ingredients
  

1 cup = 250 ml

  • 1 cup rice flour
  • 1 tsp white sesame seeds
  • 1/2 tsp carom seeds
  • 1/2 tsp black pepper powder
  • 1/8 tsp asafoetida (hing)
  • 1/4 tsp roasted cumin powder
  • Salt to taste
  • 2 tbsp oil
  • 1 cup water
  • Oil for frying

Instructions
