Rice cooker eggless banana cake | banana bread in rice cooker | how to make steamy banana bread in rice cooker is a unique way to make cake in electric rice cooker. Not everyone has oven or microwave but their love for baking cakes at home make them to search for other baking techniques.
Undoubtedly, the most common method of baking after oven is kadai or cooker on gas stove. Though we haven’t tried baking that way but you will surely find some more different ways to bake a cake in this blog. Eggless pillow marble cake in sandwich maker, cucumber cake in steamer & Mini eggless semolina chocolate cake in appam pan are such cake recipe which stand at different footing and you can try them by putting very least efforts.
ABOUT THE RECIPE
This recipe has been followed from the celebrity chef Gautam Mehrishi on a TV show in which he called it ‘bread’. Found the recipe quite different & worth trying, but it raised a big doubt too. The doubt was pertaining to steaming flour/maida.
Cakes are generally baked in oven & flour is properly gets cooked due to the heat of oven whereas just steaming flour was somewhat raising our eyebrows.
But lately two things motivated us to go ahead in making it. One, this is the recipe of a celebrity chef, so no question of doubting it. And second one is bit funny but it’s a fact that if steamed flour can be eaten through momos, why can’t this cake. Lol.
Therefore we moved ahead and this is obvious that if results would have been bad, there weren’t this post on this blog.
BANANA BREAD v/s BANANA CAKE
If you have noticed the title of post, you must have found the use of both words “cake” & “bread”. And this is the most confusing part when it comes to baking with bananas.
There are number of opinions and ideas and studies and observations distinguishing banana bread & banana cake but somewhere they are conflicting too.
Here’s summarising few of the most common discussions about banana bread/cake available on google :
- It falls into the category of quick breads. Not with yeast, but they are leavened with baking soda & baking powder and it requires no proofing time. They are dense like bread but sweet like cake. You can’t call them cake though they don’t seem like bread.
- The sweetness in cake is much more than that of a bread and it being too much sweet is a cake & not a bread.
- Bread is soft & light whereas cake is dense and heavy. It being the later must be a cake & not bread.
- If you make it in rectangular loaf pan & cut in the shape of a bread slice, it’s a bread and if in other shaped tin, it’s a cake.
- Cake is covered with whipping cream whereas bread is left naked. If it is covered, it’s cake otherwise bread.
- There’s a difference between the ingredients, method, taste & way of eating and depending upon that, it can be ascertained whether it’s a bread or cake.
OMG… suggestions and observations are endless so as your confusions.

Stepwise pictorial recipe of Rice cooker eggless banana cake
- Add water in the pot of rice cooker and switch on the cooker. We have to boil the water.
- In a bowl add maida, baking powder, baking soda, cinnamon powder, salt, nutmeg powder and sugar. Mix.
- Add bananas after mashing them. Also add butter and oil. Walnuts are to be added after tossing in a tsp of flour.
- Mix everything well by adding milk. If the dough is dry, add little more milk. Though we didn’t need to add more than 1/4 cup. Remember.
- You have to make a dough which is gooey and sticky. Don’t bring the mixture to the pouring consistency like batter.
- Transfer the dough in a greased cake tin and tap the cake tin so that dough levels up.
- By now, water in the rice cooker must have begin to boil. Place steam rack over the pot.
- Place the cake tin and cover the lid.
- Let the cake steam for 20 minutes. Check the cake using toothpick method.
- Take the cake tin out and let it turn completed cool.
- Invert, cut into slices and enjoy.
NOTES
- Before beginning the process, make sure the cake tin you are going to use gets fit properly in the steam rack.
- There’s no strick quantity of water need to be added in pot. Water should be just enough to steam the bread/cake for 20 minutes.
- If the butter you are using is salted, then avoid adding extra salt as mentioned.
- The ideas behind tossing walnuts with flour is that the walnuts doesn’t sit at the bottom of cake tin.
- The cake/bread will have a whitish colour and not that deep brown like we get in oven.
- You can make this cake in regular steamer also in which you make dhokla, idli or anything else.

Ingredients
FOR DOUGH
- 2 bananas medium/ripe
- 1.5 cup maida/all purpose flour
- 1/2 cup sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp cinnamon powder
- 1/2 tsp nutmeg powder
- Salt a pinch
- 2 tbsp butter melted
- 1/4 cup milk
- 3 tbsp oil + for greasing
- 2 tbsp walnuts roughly chopped
FOR STEAMING
- 5-7 cup water
- Rice cooker
Instructions

Truly rice cooker is very helpful for many of the recipes calling for steamimg. Thank you for taking your time to writing in.
