And still many more to add and that’s the visual, the aroma and tangy lemon wafting through the kitchen.
This dish is a hard-core thief which has the tendency to steal your heart.
Golden and crisp, yet soft inside, these potato wedges heavily loaded with lemon flavour and aroma of herbs speaks volumes about Mediterranean flavors.
This recipe is enough to break the stereotypes that you need expensive and loads of ingredients to make a dish truly addictive.
Not just flavours, but this dish is unique in terms of cooking process as well. Potatoes cut into wedges are slow roasted (in oven in this case) into lemony broth causing them to absorb the intense flavours and hence turning simple ingredient (potato) into something mind boggling.
This method is quite different from the regular roasting process wherein potatoes are just sauted in oil in a pan.
The 3 liquid ingredients (oil, lemon juice & water) have their respective roles to play. Where water is helping the potatoes to turn tender, lemon juice is getting infused into wedges to flavour them and oil is making it cooked and crisp.
And rest of the ingredients i.e. garlic, oregano, pepper, lemon zest and salt help in building and deepening the flavours.
This dish can be served with anything as a side or even it can stand alone as well firmly.
STEP WISE PICTORIAL RECIPE OF OVEN ROASTED GREEK LEMON POTATOES RECIPE
Cut potatoes into wedges and put in the water till used. It will prevent them from turning brown.
Take a baking dish and add water or vegetable stock, oil, fresh lemon juice, garlic, oregano, salt, black pepper powder and lemon zest. Mix them well.
Arrange potato wedges in the dish without overlapping each other.
Top with lemon slices here and there, though not necessary.
Bake in preheated oven @200°C for 40-45 minutes.
Take the dish out and turn the sides of potatoes.
Bake further for 40-45 minutes or until potatoes turn brown and tender.
This is the stage when the entire liquid content in the dish is absorbed by potatoes, except oil.
If you want the wedges to be more crispy, bake more for 15-20 minutes.
Greek Lemon Potatoes are ready. Arrange the potato wedges in a serving plate. Also drizzle the oil lying in the dish.
Garnish with chopped parsley or cilantro. Enjoy.
NOTES
- Every oven is different so is the baking time. You need to see whether your potatoes have turned tender and crisp enough to eat and also have absorbed the lemon and water. To get such results, your oven may take more of less time.
- With 1/4 cup of lemon juice, 1 tsp lemon zest and lemon slices over the top, you will get a strong lemony flavoured potatoes. If you want your potatoes to be mild, reduce anything out of 3.
- The purpose of topping the dish with lemon slices is to make the slices release their natural oil into the potatoes during the process of baking. Also, the beautifully charred slices will give a rustic Mediterranean touch and character to the dish.

- 4 big potatoes (around 680 grams - cut into wedges)
- 1/4 cup olive or vegetable oil
- 1/4 cup fresh lemon juice
- 3-4 garlic cloves (chopped)
- 1 tsp oregano (or mixed herbs)
- 1/2 cup water or vegetable stock
- Salt to taste
- 1/2 tsp black pepper powder
- 1 tsp lemon zest
- 3-4 thin lemon slices
- Cilantro or parsley for garnish
