ABOUT OKRA STIR FRY
Vegan, gluten-free and one pot recipe, okra stir fry, commonly known by the hindi name “Bhindi Ki Sabji” in every indian house.
In English, okra is named as “lady finger” and is one of the most loved Vegetable.
If you look at the list of ingredients, it will make you realise how simple is this recipe.
There are many ways to make okra in india, but the present one is the simplest of all. It gets cooked with just handful of ingredients in less than 15 minutes.
And most interestingly, you need not to cook each ingredient separately at different stages. Just put everything together in oil and you are done. Isn’t it so easy?
PRO TIPS TO KEEP OKRA LEAST SLIMY
Many people dislike Okra due of its texture and sliminess. But if you care for little things while cooking this Vegetable, you will find the least sliminess :
1. Wash okra only before cutting it.
2. Let okra dry out first before chopping. If you are in a haste to cook, then wipe out the extra water from each okra with a clean kitchen towel, but, in any case, don’t cut okra while it is wet. Alternatively, if you have plans to cook okra next day, better wash them at night and leave to dry out. Next day the things will be much easier for you.
3. If using frozen okra, then first spread okra on a tissue paper so that all moisture gets soaked by tissue. Wet okra will lead to slimy okra.
4. Never add water to cook okra. It contains enough natural moisture to get cooked in it’s own steam.
5. Don’t overcook it. Overcooking will make okra mushy and thereby sliminess will be enhanced.
SERVING SUGGESTIONS
This is counted as the simple meal which is served with roti/indian flat bread.
Though in some parts of the country, people love to have it with rice too, but this doesn’t happen in northern India, a place we belong to.

Stepwise pictorial recipe of Okra stir fry indian
- Firstly wash okra very well. Note that wash okra before cutting.
- Leave it aside in colander so that all water drains from okra. Okra must be completely dry before cutting.
- Chop it in small circles and keep aside.
- Take a pan and add oil in it.
- Add all the ingredients EXCEPT dry mango powder.
- Give it a stir so that everything mixes very well.
- Cover the pan with a lid and let okra cook on low heat.
- At short intervals, keep on stirring okra so that it doesn’t stick to the pan.
- In 10 to 12 minutes, when okra turns almost tender, remove the lid and add dry mango powder. Stir.
- Let it roast on low heat uncovered for 2 minutes.
- Okra stir fry is ready.Enjoy warm.
NOTES
- Onion here is not browned by stir frying first because little rawness of onion bring crunch to every bite, which will feel good while eating soft okra. However you can brown onion first if like that way.
- Few love to add tomatoes in okra but we don’t. We realise tomatoes make okra bit mushy thought it is widely added. Choice is yours.
- Add mango powder only at the end when okra is almost cooked. Adding sour agent initially create hurdle in getting the food turn tender. However you may also skip dry mango powder.

Ingredients
- 1 lb/500 gram okra
- 1 big onion cut lengthwise
- 1/4 tsp turmeric powder
- 1/2 tsp or as per taste red chilli powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1.5 tsp dry mango powder
- Salt to taste
- 1 tbsp oil
Instructions
- Firstly wash okra very well. Note that wash okra before cutting.
- Leave it aside in colander so that all water drains from okra. Okra must be completely dry before cutting.
