WHAT IS POORI ?

 

Poori or also spelled as Puri is a beloved Indian fried flat bread made from whole wheat flour, water and a pinch of salt.

Traditionally pooris are deep fried and they puff up when fried, creating a light, airy texture.

This is one such Indian food item which holds a special place in the hearts and homes of many. Often served alongside potato curry or chickpea masala or kala chana dry, poori is a staple in Indian cuisine, particularly during festivals and celebrations.

Its versatility extends to sweet variations, where it’s paired with desserts like suji ka halwa during navratri Kanya poojan.

Despite its simplicity, poori embodies the rich flavors and traditions of Indian culinary culture, bringing joy to each one, be it a kid, adult or old.

NON FRIED POORI

 

But with the people getting more vigilant towards health and their diet, there’s a change in the food trends also and usually deep fried food is seen as a guilty culprit.

This is one of the prime reason that ovens and air fryers are taking so much of leap and edge in modern kitchens in place of oil filled pans.

Although any food item which is generally deep fried can be baked in oven or air fried in air fryer but for pooris, it looked to be like an impossible task.

But recently we saw fews reels in Instagram making pooris in air fryer without even a single of oil.

Initially it was hard to digest but then to make ourselves believe, we first made one poori in air fryer without shooting a video and we were surprised to see the results.

POACHING OF POORIS

 

Pooris when rolled were slipped into hot water for 1-2 minutes. That process is called poaching.

Poaching of pooris is very important before going to Air Fryer because it moistures it and as a result gets prevented from hydrating in air fryer.

POSITIVE FEEDBACK

 

1. Pooris tried in air fryer came out so soft and fluffy.

2. They exactly look like pooris.

3. They seem to be raw from some portions but actually they are not. It’s just that it’s not brown all over.

4. They remained soft even after hours.

NEGATIVE FEEDBACK

 

1. They taste good but not EXACTLY like deep fried version because poori is all about deep frying. Non fried poori is add good as roti/chapati/fulka.

2. If you are expecting 100% taste of real poori from these air fried pooris, then please don’t feed your expectation. This recipe is not for you.

3. This air fried poori can only give psychological satisfaction because of its complete resemblance to real poori. But not in terms of taste.

4. You can not make this poori without Air Fryer. Though the viral reel is talking about making it in oven as well with the fan mode on, but out attempt in making it in oven miserably failed. Pooris were turned out completely hard like pappad.

5. Poori is an indian dish and air fryer is modern appliance of western culture and here the contradiction lies because every Indian kitchen doesn’t have air fryer so far.

6. They take too much time in preparation. Each single poori takes 5 to 6 minutes in cooking, if your air fryer can accomodate only 1 poori at a time.

7. Not suitable for big family to serve.

 

WAY OUTS

 

There’s no way out to make these pooris very quickly like fried one. But when it comes to healthy eating, time can be managed.

If you think this method is not suitable for making entire batch of pooris for whole family, then at least this can be utilized for the selected members of family who are craving for it but can’t have it due to health or other reasons.

So go ahead and enjoy this recipe, provided you have Air Fryer.

This head is named as edit because this paragraph is added after the post was finally published. Actually my sister tried the same poori after couple of days i posted it. The only thing was she added a tablespoon of oil while kneading the dough. Rest of the process was completely same and as per her version, it exactly taste like poori. 

Meaning thereby, may bit of oil in dough can bring a big difference. Try it for yourself and see the magic flowing.

STEP WISE PICTORIAL RECIPE OF OIL FREE PURI RECIPE

 

1. Take flour in a bowl and add curd and salt.

2. Mix them very well.

3. Now start adding water, little at a time, and begin to knead the dough.

4. Knead a tight dough.

5. Cover the dough and put on rest for 16-20 minutes.

6. After 20 minutes, make out small balls out of entire dough. We managed to make 8 balls out of whole dough.

7. Roll each ball into a flat disk in the shape of poori. Dust dry flour wherever needed.

8. Heat drinking water in a pan. Water needs to be very hot but not roll boiling.

9. Slide a rolled Puri in water. It will sink in the water at the beginning.

10. After 1 to 2 minutes, poori will rise up to the surface.

11. Immediately take it out from water and put into the air fryer basket. Add only as much pooris as your air Fryer basket can accommodate. We have small air fryer, so couldn’t add more than 1 poori.

12. Airfry @200°C for 4-5 minutes. As every Air fryer is different, so air frying time may vary from air fryer to air fryer.

13. Once done, take it out and prepare the next and so on.

Zero oil poori is ready to enjoy. We served it with dahi wale Aloo, the recipe of which is given here.

  • 1/4 tsp salt
  • Some flour for dusting
