Dark, meaty, spicy and sizzling, these Seekh kebabs are the great vegan substitute to non vegetarian kebabs made using earth mushrooms and basic Indian spices.
These cruelty free healthy veg kebabs made with just 1 tbsp of oil are purely guilt-free and enough to make you fall in love with them, either you are a mushroom lover or not.
And if someone is there who hates mushrooms so badly and not willing to eat it by any chance, serve to them and they will not be able to identify that these vegetarian kebabs are made of a mushrooms.
By saying so doesn’t mean you have to feed some come what may… lol.
WHAT IS SEEKH KEBAB?
The word “Seekh” in the recipe stands for “Skewer” be it either metallic or wooden.
And the Kebabs are generally minced food (mostly non vegetarian) wrapped around the seekh and cooked in oven/tandoor.
As the prime ingredient used in the recipe is MUSHROOM, so they are named as Mushroom Seekh kebabs.
WHY MUSHROOMS ?
It has already been stated that such type of kebabs are generally made with non veg, but to give it a vegan twist with much like taste and texture, we have chosen Mushrooms because they provide meaty texture and umami flavor.
Mushroom is one of such vegetable which has high popularity in vegetarian dishes as a meat substitute.
BINDING AGENT
Alongwith mushrooms, we have used another ingredient Tofu. The purpose of tofu is to bring good binding to the kebabs, of course besides cornstarch. But before using tofu, make sure it is firm otherwise moisture in it will not allow you to shape the kebabs.
CUSTOMISABILITY
This recipe can easily be customized in terms of spices and one ingredient tofu.
We have added the spice level through three ways ie green chillies, red chilli powder and black pepper powder, but you can easily manipulate them to make it lesser spicy.
If you don’t have an easy access to dry mango powder which is popularly called amchur and chat masala, just skip them and go for lemon juice for a tangy touch.
Besides, you can easily go for smoked paprika, all spices, cayenne pepper, chilli flakes and nutritional yeast.
These are many substitutes for tofu as well. You can opt for boiled potatoes, sweet potatoes, boiled and minced soya chunks or some boiled dal like chana dal or chickpeas or anything with you want to add and have the wisdom that it will add a good binding to the recipe.
MODE OF COOKING
we have used air fryer in making these kebabs and they came out so wonderful. Less oil and amazing results. You can call this recipe one of the best air fryer snacks.
If you don’t have an air fryer, you can bake or grill them.
PERFECT FOR EVERY OCCASION
You do not need any special occasion to make and enjoy them, but it can be a part of your treat anyday anytime. So it can be easily said that it’s a perfect treat for parties as one of the best Indian party starters, kids’ lunchboxes, evening snacks or tea-time treats.
SERVING
We have served them with green chutney. You can use any dip of your choice, be it garlic dip or tahini sauce.
Besides, remove the skewers, wrap in tortilla or pita with lettuce and onion.
STEP WISE PICTORIAL RECIPE OF MUSHROOM SEEKH KEBAB RECIPE IN AIR FRYER:
Wash and thinly chop mushrooms in chopper. If you don’t have chopper, you can chop them with knife.
Take them out in a bowl.
Chop onion and add in separate bowl. Also chop coriander leaves, green chilies, ginger and garlic. Take them out in the same bowl carrying chopped onion. Keep aside.
Take a pan and add chopped mushrooms in it.
Put the heat on high and start stirring it. Mushrooms will release water. Keep cooking.
When there remains very less water, bring the heat to low and stir.
When water is completely evaporated in 10-12 minutes, transfer the mushrooms in a bowl and leave them to cool down completely.
Add crumbled tofu and chopped onion & coriander mixture.
Then add red chilli powder, turmeric powder, black pepper powder, garam masala, roasted cumin powder, dry mango powder, chaat masala and oil.
Mix them well.
Now start adding cornflour, little at a time.
Form a soft but shapable dough. In making this dough, we used 6 tbsp cornflour. Place the dough in refrigerator for 15 minutes for easy handling.
Using wet hands, wrap the dough around skewers giving it a cylindrical shape, like that of a seekh kebab.
Put them in greased air fryer basket and apply oil on it. If you don’t have air fryer, you can grill them in oven or even directly on gas stove over grill rack.
Air fry @180°C for 10-12 minutes. Mushroom kebabs are ready.
Enjoy.
NOTES
- In place of tofu, you can use boiled potatoes, sweet potatoes, soya chunks or any boiled lentils or legumes.
- If you don’t have dry mango powder and/or chaat masala, you can use lemon juice.
- Use ginger garlic paste if you don’t like them in bites.
- If using wooden skewers, soak them in water before using for 15 minutes atleast, otherwise they may catch fire while grilling.

- 2 packs/400 grams button mushrooms (or any mushrooms of your choice)
- 1/2 cup/100 grams firm tofu (pressed & crumbled)
- 1 big onion
- 2-3 green chilies
- 1 inch piece of ginger
- 4-5 garlic cloves
- Handful of coriander leaves
- Red chilli powder to taste
- 1/4 tsp turmeric powder
- 1/2 tsp black pepper powder
- 1 tsp roasted cumin powder
- 1/2 tsp garam masala
- 1/2 tsp dry mango powder
- 1 tsp chaat masala
- 1 tbsp oil
- 6-7 tbsp cornflour (called cornstarch outside India)
