Vegan, gluten free and one pot meal, pudina rice is an aromatic & flavourful south indian recipe made in a simple way using regular ingredients.

The best of the recipe is that this is hassle free any gets ready in 15 to 20 minutes including cooking time.

Being one pot meal, you hardly need any accompaniment to cherish them and can be eaten as it is. Yes, if you associate simple yoghurt or raita with it, it’s taste going to be felt quite enchanting.

2 WAYS TO MAKE IT

First method is the one, with which mint rice are made, is shown in this post you are reading.

It is pressure cooker method wherein rice, mint and other spices are cooked together.

Second method is the one where you cook white rice separately and cook the mint mixture separately and thereafter mixes both.

We found the first method bit comfortable being one pot cooking. Yes, the second part is much helpful if you have some leftover cooked white rice and want to utilize them.

OTHER VARIATIONS

Pudina rice recipe gives you the liberty to put more ingredients if you like.

We have kept it very simple and basic giving priority to mint only.

But you may add veggies like carrots, capsicum, cauliflower, potatoes, tomatoes or anything you like in this recipe. Also adding coconut will make it more flavourful. So feel free to add all or any of the vegetables in it if you want to.

MAKING OF MINT PASTE

  1. Take a blender and add all the ingredients mentioned under the head “FOR MINT PASTE”.
  2. Grind to a fine paste. Keep aside.

MAKING OF MINT RICE

  1. Add oil in pressure cooker.
  2. Add bay leaf and cumin seeds. Let seeds splutter.
  3. Put cashews in oil and roast them till turn light golden.
  4. Add onion and saute till turns golden brown.
  5. Pour in the mint paste and let it cook for about 2 minutes until it cooks and absorbs well.
  6. Add rice in pressure cooker. The rice should have been washed and soaked for about 20 minutes before using.
  7. Add salt and water and mix.
  8. Put the lid of pressure cooker on and let it blow 2 whistles.
  9. When the pressure from cooker releases, open the lid.

Mint rice are ready. Enjoy warm with curd or the way you love to.

FOR MINT PASTE

  • Handful of mint leaves
  • 3 cloves
  • 1 inch ginger
  • 1 star anise
  • 2 green chillies
  • 2 pod cardamom
  • 3 cloves
  • A piece of cinnamon
  • 1/2 tsp whole black pepper
  • A piece of mace/Jayatri
  • 1/4 tsp nutmeg/supari
  • 2 tbsp water

FOR MINT RICE

  • Mint paste already prepared
  • 1 cup basmati rice
  • 2 tbsp oil
  • 1 bay leaf
  • 1 tsp cumin seeds
  • 1 big onion
  • 8-10 cashews
  • Salt to taste
  • 2 cup water
