Mini Vegan Cherry Clafoutis recipe with step wise pictorial and video method.
WHAT IS CLAFOUTIS?
Clafoutis is a kind of baked flan which comprises of a layer of fruit topped with batter having sugar, eggs, flour and milk.
This French dessert is particularly made with Cherries, however you can transform it into another form using any other fruits of your choice.
We have just changed it a bit by replacing the dairy products (milk and butter) with vegan one.
HOW TO PRONOUNCE CLAFOUTIS?
Clafoutis is pronounced as “kla-foo-tee” and the word S in the end is silent.
CAN I PUT THE CHERRIES WITHOUT PITTING THEM?
Ofcourse Yes.
Many add it without deseeding and that helps in not to release the juice and colour of cherries into the batter.
However in such a baking, you must wa rn the eaters to take care of their teeth by telling them in advance about the status of cherries.
BUT in case you are baking Clafoutis for the kids, this is always recommended to remove the pits and only thereafter use the cherries.
HOW TO EAT CLAFOUTIS?
Warm, at room temperature or chilled, as you like, but never the hot.
With whipping cream or vanilla cream, as you wish.
Or by just dusting with powdered sugar, the choices are yours.
STEP WISE PICTORIAL RECIPE OF MINI VEGAN CHERRY CLAFOUTIS
1. Pluck the stems and deseed the cherries. Do not cut the cherries for removing pits but use some toothpick or chopstick. Just insert the chopstick in the stem part of cherry, gently press and seed will come out from the other end.
2. We are using small ramekin bowls. However you can use a large baking dish or pie dish as well. Grease the bowl with butter. For the given ingredients, you need to have 4 ramekin bowls.
3. Arrange cherries at the base of the bowl. In one bowl, around 15 cherries could be accommodated. Keep aside.
4. Add 1/2 cup semolina, 1/4 cup sugar, 1 tsp baking powder, 1/4 tsp baking soda , 1/2 tsp vanilla essence, 1/2 cup milk and 50 grams melted butter in a bowl.
5. Give them a good mix.
6. Pour the batter in the ramekin bowls, not upto the rim.
7. Bake in a pre-heated oven @200°C for 18 to 20 minutes.
Bring them out. Clafoutis is ready. Enjoy.

Mini vegan cherry clafoutis recipe
Ingredients
1 cup = 250 ml
- 60 Cherries (canned or fresh/roughly 350 gram)
- 1/2 cup semolina (or all purpose flour)
- 1/4 cup sugar of your choice (we used white khandsari sugar)
- 1/2 cup milk of your choice (we used plant milk)
- 50 grams +little more for greasing melted butter of your choice (we used vegan butter)
- 1 tsp baking powder
- 1/2 tsp vanilla essence
- 1/4 tsp baking soda
