And for that reason, you can replace maida with atta, skip semolina and opt for baking in oven or air frying.
Though baking/air frying doesn’t bring much difference in authentic taste but yes, if you replace maida with atta and skip semolina, taste and texture may collapse. So it is suggested to make this crispy and flaky Maddur Vada recipe at home using all the ingredients as it is without making any alternations, except the quantity. Quantity here means you can reduce the quantity of maida and semolina.
Although not the part of authentic Maddur Vade Recipe, but you can add chopped nuts of your choice for extra richness.
DIFFERENCE BETWEEN MADDUR VADA AND MEDU VADA :
Medu Vada is one of the most popular South Indian snack and please don’t get confused with the two. Both Medu Vada and Maddur Vada are altogether different.
- Maddur Vada is flat and crisp but Medu Vada is soft and fluffy.
- Maddur Vada is made using rice flour, all purpose flour, semolina and onion as the prime ingredients but Medu Vada is made using urad dal.
- And lastly, Maddur Vade is served with coconut chutney and tea or filter coffee but on the contrary, medu Vada is served with Sambar and coconut chutney.

Take a bowl and add onion in it. For this recipe, the onion is cut lengthwise only. Then add all the other ingredients i.e. roasted peanuts (chopped), white sesame seeds, asafoetida (hing), green chilies (chopped), curry leaves (chopped), coriander leaves, ginger (grated) and salt. Also add rice flour, all purpose flour and semolina. Lastly add hot oil. Mix it by pressing the onion so well that it releases it’s flavour and moisture.




Air Fryer Maddur Vade are ready. Serve hot with coconut chutney.
NOTES
- For the crispy Vada, try to keep the dough as tight as possible.
- Do not add water until onion releases it’s moisture to the flour. It will help you to understand that how much water is needed.

Maddur Vada Recipe (Air Fryer & Deep Fried) | Authentic Karnataka Style Maddur Vade Recipe
Ingredients
1 cup = 250 ml
- 1 cup onion (cut lengthwise)
- 1 cup rice flour
- 1 cup all purpose flour
- 1/2 cup semolina/rava/suji
- 2 tbsp roasted peanuts (chopped)
- 2 tbsp white sesame seeds
- Pinch of asafoetida (hing)
- 2 green chilies (chopped)
- 2 tbsp curry leaves (chopped)
- 2 tbsp coriander leaves
- 1 tbsp ginger (grated)
- 1 tsp salt
- 2 tbsp hot oil (plus for frying)
- Water as required
Instructions
- Take a bowl and add onion in it. For this recipe, the onion is cut lengthwise only.
- Then add all the other ingredients i.e. roasted peanuts (chopped), white sesame seeds, asafoetida (hing), green chilies (chopped), curry leaves (chopped), coriander leaves, ginger (grated) and salt.
- Also add rice flour, all purpose flour and semolina.
- Lastly add hot oil.
- Mix it by pressing the onion so well that it releases it's flavour and moisture.
- Now start adding water, little at a time for kneading a dough.
- The dough has to be really tight.
- Put it on rest for 5 minutes.
- Now take a small portion of dough and roll it like a ball.
- Then flatten it between your palms. It should neither be too thin nor too thick.
- Also try to keep it round as much as possible, though not to so strict.
- Instead of doing it between palms, you can flatten the balls on a clean surface as well.
- For DEEP FRYING, put them into medium hot oil and fry till golden and crisp from both the sides.
- For AIR FRYING, put them greased air fryer basket.
- Apply oil on them.
- Air fry @180°C for 10 minutes.
- Open the air fryer, turn the sides of vadas and again brush oil on the top.
- Again Air Fry for 8 minutes at the similar temperature.
- Air Fryer Maddur Vade are ready. Serve hot with coconut chutney.
