Take a bowl and add onion in it. For this recipe, the onion is cut lengthwise only.
Then add all the other ingredients i.e. roasted peanuts (chopped), white sesame seeds, asafoetida (hing), green chilies (chopped), curry leaves (chopped), coriander leaves, ginger (grated) and salt.
Also add rice flour, all purpose flour and semolina.
Lastly add hot oil.
Mix it by pressing the onion so well that it releases it's flavour and moisture.
Now start adding water, little at a time for kneading a dough.
The dough has to be really tight.
Put it on rest for 5 minutes.
Now take a small portion of dough and roll it like a ball.
Then flatten it between your palms. It should neither be too thin nor too thick.
Also try to keep it round as much as possible, though not to so strict.
Instead of doing it between palms, you can flatten the balls on a clean surface as well.
For DEEP FRYING, put them into medium hot oil and fry till golden and crisp from both the sides.
For AIR FRYING, put them greased air fryer basket.
Apply oil on them.
Air fry @180°C for 10 minutes.
Open the air fryer, turn the sides of vadas and again brush oil on the top.
Again Air Fry for 8 minutes at the similar temperature.
Air Fryer Maddur Vade are ready. Serve hot with coconut chutney.
