MAKING OF LAUKI KOFTAS
Peel bottle gourd/lauki. Grate it with the medium sized grater. Place a clean kitchen cloth in a bowl. Transfer grated louki in it. Squeeze it so well so that there remains no water. But don’t discard this water. Transfer louki in a bowl.
Take green chilies, ginger and coriander stem in a mortar and crush with pestle. Add this crushed paste to louki.
Also add onion (thinly chopped), carom seeds, turmeric powder, red chilli powder, coriander powder and garam masala. Also add hot oil. Give them a mix using your finger tips. Then add gram flour and salt. Salt should be added only in the end otherwise it tends to make louki release more water. Make balls of medium size and arrange them in greased air fryer basket. Alternatively you can deep fry them on high heat. Air fry @180°C for 15 minutes or until Koftas turn brown enough to eat. You can enjoy them as it is.
MAKING OF PASTE
Add tomatoes, onion, green chilies, ginger, garlic and 2-3 tbsp of water squeezed out of the lauki. Grind to a fine puree.
MAKING OF TEMPERING
Heat oil in a pan and add cumin seeds, leaf, cinnamon stick, green cardamoms and asafoetida/hing. Let cumin splutter. Add tomato onion puree. Also add turmeric powder, kashmiri red chilli powder, coriander powder and salt. Mix well. Put a lid and let it cook on low heat. Cook until bubbles are seen.
To adjust the consistency, add the remaining louki water. Add garam masala and kasuri methi. Mix well.
FOR SERVING
Arrange louki Koftas in a serving plate. Pour hot gravy over the kofta. Garnish with fresh coriander leaves.
Serve hot with roti, paratha or naan.
NOTES
For making Koftas, add salt in the end otherwise it will make louki to release more water.

1 cup = 250 ml
FOR KOFTAS
- 500 gram lauki/bottle gourd
- 2 tbsp onion (thinly chopped)
- 1/2 tsp carom seeds
- 1/8 tsp turmeric powder
- 1/4 tsp red chilli powder
- 1/2 tsp coriander powder
- 1/4 tsp garam masala
- Salt to taste
- 1 tsp hot oil
- 2 green chilies
- Small piece of ginger
- Stem of fresh coriander
- 1/2 cup gram flour/besan
FOR PASTE
- 2 onions
- 3 tomatoes
- 3 green chilies
- 1 inch piece of ginger
- 3-4 garlic cloves
- 2-3 tbsp bottle gourd water (squeezed from lauki)
FOR TEMPERING
- 2 tbsp mustard oil
- 1 bay leaf
- 1/2 tsp cumin seeds
- Small piece of cinnamon
- 2 green cardamoms
- Pinch of Asafoetida/hing
- 1/4 tsp turmeric powder
- 1 tsp Kashmiri Red chilli powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 1 tsp kasuri methi
- 2 tbsp coriander leaves
- Water to adjust consistency (squeezed from lauki)
