How to make Dry mango powder in air fryer | homemade amchur recipe with step wise pictorial and video method.
Dry mango powder, also known as “amchur,” is a tangy spice made from unripe/raw mangoes by drying them.
Widely used in Indian cuisines, it adds a delightful zing to dishes with its vibrant flavor and citrusy aroma. Amchur is often used as a souring agent and it lends a tartness to curries, chutneys, marinades and snacks making them more flavorful.
Generally amchur is made by sun drying the raw mangoes but that is a time consuming process. You need to put the mango slices under sun for couple of days until they turn completely dry and crisp.
Even if you don’t have the paucity of time and enough time to make dry mango powder for 3 to 4 days but still there are many people who live in such houses, localities or buildings where they don’t have an access to direct sun light.
We too deal with the same situation. Though we have a roof top but can’t leave any food out in the sun because too many monkeys come over there.
This is the only reason we always look forward to oven or air fryer for making garlic powder, onion powder or even coriander powder. However mint gets dry earlier without sun even. Oh, how can we forget to share that we made kasuri methi too using air fryer.
Besides the regular reasons that homemade amchur is cost effective and preservatives free, the main and foremost reason is its taste as well.
In comparison to store bought dry mango powder, this homemade amchur is extremely delicious and too tangy.
If you add 1 tbsp of store bought amchur in your dish, this needs to be added in half quantity only because this is that much strong.
You can store this homemade amchur for 6 months in a dry clean bottle.
STEP WISE PICTORIAL RECIPE OF HOW TO MAKE DRY MANGO POWDER IN AIR FRYER
Take raw mangoes and wash them. You can take as many as mangoes you want. We have made aamchur with 1 kg raw mangoes.
Peel their skin.
Now using the same peeler, peel the entire mangoes in the shape of slivers. They way, all the mangoes will be cut into uniform pieces.
Put the mango slivers in air fryer basket. Do not overcrowd the basket.
Air fry them @80°C for 1 hour 30 minutes. Check on the mango slices occasionally and flip them if needed to ensure even drying. As every air fryer is different, so there may be a slight variation of total timings. All we need is crispy mango slivers.
Once they cool down completely, grind them to a fine powder.
Dry mango powder is ready.
