How to make Aamras | aamrus recipe | mango puree recipe with step wise pictorial and video recipe.
WHAT IS AAMRAS
AAM is a hindi word for mango and RAS stands for puree/juice.
So Aamras is a mango puree which is cherished as a dessert or side dish.
Pulp from the mango is extracted usually by using hands and are pureed with sugar, milk/water and cardamom.
SPECIALITY
Aamras is the speciality of Maharashtra and Gujrat and it is often served with puri.
However you can cherish it with anything you eat everyday.
ONE RECIPE ; DIFFERENT WAYS TO MAKE
If you begin to surf internet in search of its perfect recipe, you will find different approaches towards making of Aamras.
- Few add jaggery and milk or water.
- Some enjoy it as it is, without adding anything.
- Somewhere little dry ginger too is added.
- Many recipes also suggest addition of dry fruits too.
Amongst all these visions, it was tough to reach the exact conclusion that which combination will give the best results.
And we found the solution again with out good friend and food blogger Ms. Lata Lala, whose suggestions, earlier also, had made our pav bhaji so perfect.
Being a native of maharashtra, she was the best person to give suggestions on maharashtrian speciality.
And truly, this aam ras came out so good that we all enjoyed it to the fullest. Thank you Ms. Lata Lala, who made this simple recipe so different.

- Add mango pulp into a blender. You can use frozen mangoes too.
- Put some sugar too. Quantity of sugar will depend on the sweetness of mangoes itself and according to your taste. We needed to add between 3 to 4 tbsp of sugar.
- Add cardamoms and ice cubes.
- Give a nice blend to make a fine puree.
- Aam ras is ready.
Enjoy chilled.

Ingredients
- 2 cup mango pulp or 3-4 mangoes
- Powdered sugar as per taste
- 2 green cardamoms optional
- 4-6 ice cubes or 1/4 cup chilled water
Instructions
- Add mango pulp into a blender. You can use frozen mangoes too.
- Put some sugar too. Quantity of sugar will depend on the sweetness of mangoes itself and according to your taste. We needed to add between 3 to 4 tbsp of sugar.
- Add cardamoms and ice cubes.
- Give a nice blend to make a fine puree.
- Aam ras is ready. Enjoy chilled.

This tastes amazing with crisp hit pooris and aloo ki sabzi.
