Gluten-free Rice Flour Bread Recipe (Eggless) with step wise pictorial and video method.
Free from eggs & gluten, this bread made with rice flour is a great alternative to regular atta/maida bread and perfect for people having with dietary restrictions and alergy.
And it can be used as a routine bread for making snacks, toasts and sandwiches.
NO-KNEAD RICE FLOUR YEAST BREAD
This bread is not just free from eggs but free from efforts as well.
The difficult part of the bread making is that bread dough needs lots of efforts in kneading and this is the spot one feels discouraged.
But this recipes gives a reason to be happy as it calls for no kneading at all. You just need to bring everything together and that’s it.
INGREDIENTS NEEDED :
RICE FLOUR : Use fresh good quality of rice flour.
CORNFLOUR : Cornflour helps in supporting the rice flour in the making of bread. In place of cornflour, you can use tapioca flour as well.
YEAST : Again yeast has to be of good quality and fresh. There are two types of yeast : active & instant. We used instant of didn’t require activation but you can use active as well which needs to be activated first. Click here for more details on yeast and it’s activation.
OIL : Oil brings the sluggish part to the bread. Instead of oil, you can use melted butter as well.
SALT : slight touch of salt saves the bread from totally bland taste.
SUGAR : Where there is yeast, there will be a sweetener, be it sugar, jaggery or honey. Sweetener will help the yeast to activate.
MILK : Milk will make the bread more rich whereas water could also be used. But make sure milk should be lukewarm like we needed for making curd.
STEP WISE PICTORIAL RECIPE OF GLUTEN FREE RICE FLOUR BREAD RECIPE (EGGLESS) :
Take rice flour, cornflour, sugar, yeast and salt in a bowl.
Mix well.
Add milk & oil.
Mix well. It requires no kneading but only mixing.
You will get a sticky kind of dough.
Cover the bowl and leave it at some warm place for 60 minutes.
Size of the dough is enhanced by then.
Transfer the dough in a greased loaf pan. Make the top surface of the dough smooth.
Cover the loaf pan and leave for second proofing for 30 minutes.
Brush milk over the top.
Bake in the preheated oven @190°C for 40 minutes in the middle rack with both the rods on.
Take the pan out and apply butter on it’s hot surface. Leave aside for 10 minutes.
Run a knife over the edges and take the bread out of pan.
Let the bread cook down completely.
Cut into slices and enjoy.
NOTES
We have used active dry yeast which requires no prior activation but in case you are using active Yeast, active it first with warm milk & sugar.

Ingredients
1 cup = 250 ml
- 2 cup - 275 grams rice flour
- 1/4 cup - 30 gram cornflour/cornstarch
- 1.5 tsp yeast (we are using instant yeast)
- 2 tbsp oil
- 1 +1/4 cup - 310 ml warm milk
- 1 tbsp sugar of your choice (we used brown sugar)
- 1 tsp salt
- Butter & oil for greasing
- 1 tbsp milk for milk wash
Instructions
- Take rice flour, cornflour, sugar, yeast and salt in a bowl.
- Mix well.
- Add milk & oil.
- Mix well. It requires no kneading but only mixing.
- You will get a sticky kind of dough.
- Cover the bowl and leave it at some warm place for 60 minutes.
