Yellow moong dal khokla is a savory and nutritious Indian snack or appetizer made from yellow split moong dal (yellow lentils).

This dal is soaked, grinded and steamed with different spices. Over the top, it is tempered with mustard seeds, curry leaves and garnished with coriander leaves and sometimes desiccated coconut.

Earlier we have made Dhokla with curd, Vegan Dhokla, 5 minutes Dhokla in microwave and this dhokla is very much similar to regular dhokla made with Chickpea flour with the only difference of moong dal.

It’s typically served with green chutney or a special chutney called dhokla chutney.

Making perfect yellow moong dal dhokla requires attention to detail in several steps. Here are some tips to help you achieve delicious results:

1. SOAKING MOONG DAAL: Soaking of moong dal for minimum 2 hours is must. However you can soak the dal for at least 4-6 hours or overnight. This ensures the dal becomes soft and blends smoothly.

Although we haven’t tried personally but as to us, if you are short of time, you can soak daal in boiling water for 30 minutes. Our main purpose is to make the dal soft enough to get into paste.

2. BLENDING: When ready to make the dhokla batter, drain the soaked moong dal and blend it without any water to a smooth paste. The consistency should be thick yet pourable, similar to pancake batter.

3. WHIPPING: Whipping the batter is very important to incorporate air info the batter. It makes the dhokla soft and fluffy.

4. SEASONING: Very limited seasoning go in dhokla batter. Just a sugar, salt, turmeric and citric acid. Citric acid helps in activating baking soda and hence results in sift and fluffy dhokla.

5. STEAMING: For steaming, steamer should get ready well in time because after adding baking soda to the batter, you can’t let it wait for more time.

6. TEMPERING: Tempering should be spread only after it turns slightly cool because if you pour it too hot, dhokla will turn too soggy.

7. REFRIGERATION : Let the dhokla chill before serving because it taste good only if chilled.

STEP WISE PICTORIAL RECIPE OF EASY YELLOW MOONG DAL DHOKLA RECIPE

 

Take moong dal in a bowl. Quantity of moong dal and other ingredients is given in the recipe card below.

Wash & soak moong dal for 2 hours.

Drain and add dal in a grinder jar.

Also add ginger, green chilies and sugar.

Grind to a fine paste but do not add water.

Transfer the dal paste in a bowl. Add salt, turmeric powder, citric acid, hing and oil.

Mix well in one direction for 1-2 minutes and rest for 10 minutes.

In the meantime grease the bowl and set the steamer. When 10 minutes are over, add baking soda in the batter. Instead of baking soda, you can add 1 tsp of ENO fruit salt as well.

Whisk it well in one direction only for 2-3 minutes or until batter turns fluffy.

 

Pour in the greased bowl and steam cook for 20 minutes.

Check the doneness by inserting a toothpick. If it comes out clean, its a sign that dhokla is perfectly made.
Leave it to cool completely.

In the meantime, prepare the tadka and for that take oil in tadka pan. Add mustard seeds and let them crackle.

Then add curry leaves and green chilli. Roast for a minute.

Add water & let water come to boil. Off the heat and let it cool a bit.

When the dhokla turned completely cool, run a knife over its edges. Invert and cut into pieces of desired size.

Pour and spread the tadka over it.

Also spread coriander leaves and desiccated coconut.

Serve after chilling it in refrigerator.

Ingredients
  

FOR MAKING DHOKLA

  • 1 cup Yellow Moong dal
  • 2 green chilies
  • 1 inch ginger
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 tsp turmeric powder
  • 1/4 tsp citric acid
  • Pinch of hing
  • 1/2 tsp baking soda
  • 1 tsp oil

FOR TADKA

  • 1 tsp oil
  • 8-10 curry leaves (fresh or dry)
  • 2 tsp mustard seeds
  • 1 green chilli
  • 3/4 cup water

FOR GARNISH

  • 2 tbsp coriander leaves (chopped)
  • 1 tbsp dessicated coconut (optional)
