Corn pulao recipe | vegan corn rice recipe with step wise pictorial and video recipe.
For us, holiday is always a lazy day and we are reluctant in cooking at length. And whenever such situation arises, this is usually the pulao which proves to be our best buddy.
It takes almost no time in preparation and you are sorted by putting all ingredients in one pot. And moreover it needs no special ingredients but whatever is in your hands.
We are into September and this is the time when fresh corn cobs are in the market, though it’s appearance is diminishing day by day.
Though packagings are available around the year but nothing like the fresh one and we only prefer to cook with the fresh ingredients.

COCONUT MILK PULAO : This too is one pot, gluten free and vegan pulao recipe made using homemade coconut milk. Highly delicious, this recipe is extremenly easy to make.
MINT RICE : made with fresh mint leaves, this gluten free, dairy free and one pot recipe is an aromatic and flavourful indian recipe made in a simple way using regular ingredients.
PICKLE PULAO : Cumin, cinnamon, cardamom, red chilli powder, turmeric, garam masala, garlic, tomatoes, vegetables..this recipe has nothing amongest all these, but still is the tastiest of all pulao recipes made using just pickles.
INGREDIENTS USED
For the quantity, refer to the recipe card below.
RICE : You can use any rice you use in your daily cooking but basmati rice tastes the best.
CORNS : We have used corns freshly removed from the cob. However you can use sweet corns or frozen corns too.
But always prefer to use the fresh corns because they are juicy and tasts best.
GINGER : We have added fresh ginger after grating. You can use garlic also or even ginger garlic paste.
OIL : As this is the vegan recipe, we have used only oil in cooking this rice. But if you are not making vegan corn rice, you are HIGHLY ADVISED to add butter or desi ghee/clarified butter. Rest assured, the taste of your rice will doubled ten times.
WATER : water can be comfortably replaced with milk.
OTHER SPICES : However every spice has its own role to play in releasing their flavours. But if don’t have few of the spices, don’t worry. Still you can make corn rice with the regular spices from your kitchen.
Step wise pictorial recipe of corn rice
- Wash rice very well till the water is clear and soak them for atleast 30 minutes.
- Add oil in a pressure cooker and add bay leaf, cumin seeds, black cardamom, cloves, green cardamom, star anise, cinnamon and nutmeg. Saute for couple of seconds until cumin splutter.
- Add ginger and green chili. Saute till ginger turns golden brown.
- Add coriander powder and garam masala. Mix.
- Add onion.
- Don’t let onion turn brown and cook till it becomes pink and translucent.
- Add corns and saute for a minute.
- Drain water from rice and add rice in pressure cooker.
- Pour water and add salt. Mix.
- Pressure cook for 2 whistles.
- Open the lid once all pressure releases from cooker.
- Corn rice are ready.
Enjoy warm after garnishing with fresh coriander/cilantro.

Ingredients
1 cup = 200 ml
- 1 cup rice
- 3/4 cup corns
- 1 tbsp ginger grated
- 1 onion cut into strips
- 1 bay leaf
- 2 green chilies
- 1 tsp cumin seeds
- 1 black cardamom
- 2 green cardamom
- 2 cloves
- 1 star anise
- Small piece of cinnamon
- 1/8 tsp nutmeg
- 1 tbsp coriander powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp oil
- 2 cup water
- 1 tbsp fresh coriander/cilantro to garnish
Instructions
- Wash rice very well till the water is clear and soak them for atleast 30 minutes.
